Figs & date walnuts cake Baking with Kalpana

A soft, moist & scrumptious tea cake, loaded with the goodness of date & figs. Made with whole wheat flour and cane sugar makes it more healthy. This cake is so easy to make and tasty to eat. Enjoy the wholesome slice of this cake with a cup of tea or coffee.

Ingredients :

Whole wheat flour  1-1/2 cup


Cane Sugar                     1/4 cup


Chopped Date                1 cup


Chopped Figs                 1/2 cup


Oil (neutral flavour)         1/3 cup


Butter                              2 tablespoon


water                               1 cup


Egg                                  2


Baking Soda                  1 teaspoon


Baking powder              1/2 teaspoon


Salt                                 ½ teaspoon


Walnuts                         1/2 cup


 

Instructions :

Preheat the oven to 375 degrees.


Sieve the dry ingredients.


In a large mixing bowl, soak the chopped date and figs with butter and baking soda.


Let it rest for an hour.


In another bowl Add oil, sugar, and egg, and mix them with the help of a whisk together until it is completely combined.


Throw in the soaked date and fig and gently mix them.


Using a spatula, gently fold in dry ingredients, one tablespoon at a time until just combined.


Dust the walnuts with flour and add it to the batter.


Pour the batter into an 8-inch pan, and top it with some chocolate chunks.


Bake it in the preheated oven at 170 deg on the middle rack for 55-60 minutes or until the cake is done.


Let cool the cake in the pan for 5 -7 before removing it.
