1 onion, chopped
2 cloves garlic, minced
1 can (10 oz/283g) enchilada sauce
1 can (14.5 oz/411g) diced tomatoes, drained
1 can (4 oz/113g) chopped green chilies, drained
2 cups (8 oz/226g) shredded cheddar cheese
1 tsp (5g) ground cumin
1 tsp (5g) chili powder
Salt and pepper, to taste
8-10 corn tortillas
Optional toppings: sour cream, chopped cilantro, sliced avocado

Instructions:

Preheat the oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium-high heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.
Add the enchilada sauce, diced tomatoes, chopped green chilies, ground cumin, and chili powder to the skillet. Stir well and let the mixture simmer for 5-10 minutes.
Spread a thin layer of the beef mixture in the bottom of a 9x13 inch (23x33cm) baking dish.
Warm the corn tortillas in the microwave or oven, then place a spoonful of the beef mixture in the center of each tortilla. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and beef mixture.
Once all the tortillas are in the baking dish, pour any remaining beef mixture over the top of the tortillas. Sprinkle shredded cheddar cheese evenly over the top.
Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Remove the enchiladas from the oven and let them cool for a few minutes. Serve with your favorite toppings, such as sour cream, chopped cilantro, and sliced avocado.
