    Recently I have been thinking a lot about the common denominator in nearly all health issues that we face as a 21st century society today:  depression, anxiety and other related brain health challenges, obesity, diabetes, heart disease, autoimmune diseases such as arthritis, Lupus and others, allergic disorders and sensitivities, hormonal disorders of the thyroid, estrogen, testosterone and more, sleep disorders, neurodegenerative disorders such as stroke, Parkinson’s, Alzheimer’s, and gut health disorders such as IBS and IBD and everything from constipation to diarrhea ALL have at their ROOTS underlying problem of ongoing chronic INFLAMMATION.
    So, you may ask, how does this inflammation get going and what fuels it and how do we prevent or stop it?  Great questions and the answers are explained in this week’s podcast though to cut to the chase;  it all boils down to a couple simple things that we DO or DON’T DO related to our DIET (what we eat or don’t eat), MOVEMENT we do or don’t do, SLEEP or lack thereof, our STRESS management and our GUT HEALTH.  These are the pillars of Optimal Health and how we manage them will determine if inflammation gets triggered and sustained or how we can QUENCH or STOP it. 
    AND the besta part of it all, is that this is ENTIRELY under OUR control and DOES NOT need a specific medication or pharmaceutical to solve each and every problem but usually and most commonly can be remedied with using FOOD as MEDICINE and the other habits or actions mentioned above.
    YES, FOOD can be that powerful in a POSITIVE way or conversely in a HARMFUL way and WE get to decide what lands at the end of our FORK.

    **(Continued from above) Nonalcoholic fatty liver disease (NAFLD) is a generic term for a range of liver conditions affecting people who do not drink significant alcohol. As the name states, the primary characteristic of NAFLD or FATTY LIVER is too much fat stored in liver cells.  The problem is, most do not have many if any symptoms though their liver is significantly affected, inflamed and may later lead to cirrhosis and liver failure if nothing is done about it.  This is TRAGIC as it is PREVENTABLE and REVERSIBLE through simple changes that most health care providers, including many physicians are unaware of or do not seem to promote. (Consider having your physician or health care provider test you for it as it is very common; and can be screened for with liver function blood tests and a liver ultrasound).
    Fatty liver or NAFLD is most common in people with insulin resistance (nearly 88% of the population), those that are overweight or obese, those that have high blood sugar.
    Remember, It’s not the healthy fats that make us fat, it is the SUGAR and the refined carbohydrates that make us fat.  Did you know that the average American eats 152 pounds of sugar a year or 3 pounds of sugar a week!  When you also consider that the average American also eats about 130 pounds of highly processed flours/grains in a year

    ***(Continued from above) Interestingly, though, some health influencers and even doctors have worked hard to get us to FEAR LECTINS which I really do NOT feel is warranted.  In fact, there is NO significant human data that I am aware of that shows that completely eliminating lectins from your diet will make you any healthier or cure or treat any specific illness whether it be arthritis or other auto-immune or inflammatory disorders though there are some that want us to think that.
    So what are lectins anyway? They are a type of plant protein which binds to carbohydrates and is found in many plant based foods, known as a phytochemical, which can cause issues in some people, though mostly when the foods that contain them are eaten raw.  Take for example, the case of a kidney bean; if you were to eat it raw, though almost no one would, it could make you violently sick due to the contained lectins that have not been deactivated by the HEAT of Cooking.  

    The typical foods that contain lectins are beans or legumes, potatoes, wheat, grains, and the nightshade vegetable family (tomatoes, eggplants, peppers, potatoes).  Lectins, as mentioned are plant chemicals which bind to carbohydrates and can limit or impair the nutrient absorption among other things.  Take a listen to learn more!
