Teacher and author, wrote and self published her book, Hope to Cope, an uplifting book about love, perseverance and hope. Katherine is a Cancer Survivor who lost her dad to the disease resulting in her unfinished business with cancer. On world cancer Day 2022 she launched the Hope to Cope fundraiser and gave every cent from her book to charity. Raising 100k for the Irish cancer society and Marymount
