The Food Journey #5 - Alsace with Georges Grunenwald

    Hello everyone!

I couldn’t resist starting this episode with the legendary comedian Louis de Funès from his movie “Le Grand Restaurant”. You almost don’t need a translation. It is a witty example of the love and hate relationship between France and Germany. And today’s destination of the food journey is Alsace, a region fought over many times by both countries.

So let’s move away from the clichés and preconceived ideas and dive into the fascinating culinary culture of Alsace, the land of great food and wine.

To get an insight on Alsatian cuisine, our guide today is Chef Georges Grunenwald, a native Alsatian, who is the President of Best of Gastronomie, an international association of Chefs from 135 countries, with more than 100,000 members.

    The episode is in English.

The Food Journey #4 - West Java with Roy Lesmana

The Food Journey #4 - West Java with Roy Lesmana

Welcome to Pasundan, the land of the Sundanese. The Sundanese are the second largest ethnic group of Indonesia and are based in the region of West Java.

To discover the Sundanese cuisine, our guide is Chef Roy Lesmana who actively travels the world to share and teach his passion for his home region cooking.

This island country of Indonesia is so vast that it is actually the largest on earth. It is home to more than 17,000 islands and the world’s highest level of biodiversity. With a population of 267m and hundreds of distinctive ethnic and linguistic groups, this country is an amazing array of diversity, cultures, colours and of course cuisine.

West Java is part of the Pacific Ring of Fire with high seismic activities and the occasional tsunami. Mountains and volcanoes have their benefits. Mountains allow for more diverse climates. And volcanoes give you rich and fertile volcanic soil. It is no surprise then that the land is very generous. From the traditional dry rice culture to the diversity of vegetables, fruits, spices, tea and coffee, the Sundanese cuisine has plenty to choose from.

Due to its strategic location, trading with other regions of the world was crucial to its development. At the same time, these exchanges shaped it. Hindus, Buddhists, Sunni traders, Sufi scholars, Europeans mostly Dutch who ruled it for close to 300 years, Chinese and many others have left their marks.

Albanian story and cuisine have also been shaped by the occupiers of the land, notably the ottoman empire which ruled it for more than 400 years.

Today, it’s a country getting modernized at great speed and is an official candidate for membership of the European Union.

The Food Journey #2 - Sardinia with Gianni Melis

The Food Journey #2 - Sardinia with Gianni Melis

To the west of the Italian peninsula, and just south of Corsica lies a richly diverse island. The second largest in the Mediterranean.

On The Food Journey, we are taking you to the beautiful island of Sardinia.

Not as well-known as the other Italian regions, Sardinia is a wonder to be discovered.

A very long coastline, filled with pristine and clear-blue beaches, snow-capped mountains, rolling hills and beautiful plains, contribute specific ingredients to Sardinian cuisine. The interior brings meat, dairy products, grains and vegetables.

While the sea generously offers scampi, bottarga, squid, and tuna.

Its rich cuisine is also the result of centuries of influences. Like other small regions, Sardinia had its fair share of empires through the ages: Byzantine, Aragonese, Spanish and Savoyard. They all left a trace in Sardinian rich culture and cuisine.

Let’s discover a bit more about the Sardinian cuisine. Today, our guide is Chef Gianni Melis who’s been established in Sardinia for 12 years.

    The interview is in Italian.
