Muffin Recipe DIY Guide - Also on YouTube American Muffins

Basic Muffin Recipe

Ingredients

2 cups AP flour

½ cup sugar

1 tbsp. Baking powder

½ tsp. Salt

¾ cups milk

⅓ cup veggie oil

1 egg

¾ cup mix-ins

Instructions


Preheat oven to 375F and grease a 12 large muffin pan (NO papers)

Mix all dry ingredients in a medium bowl

Crack egg into small bowl and beat until yolk is fully mixed into the white

Add rest of wet ingredients to beaten egg

Make a well in the dry ingredients and pour in the wet mixture

Mix everything together until the dry is just absorbed. Note! Do not over mix, the batter will be lumpy and that’s okay.

Add your mix-ins and gently fold them in, careful not to over mix the batter

Fill muffin pan ¾ of the way full, top with more of your mix in if you’d like, or top with coarse sugar

Bake for 20 to 25 minutes, until the tops are golden brown


Baker’s notes


Mix-ins count for things like frozen fruit, nits, chocolate chips, etc. If you want to add spices, mix them into the dry ingredients

AP flour can be replaced with your prefered flour, gluten-free or otherwise. This may affect the texture some but it will still work with 1:1 replacements

You can use any kind of granulated sugar you’d like. I love to use brown sugar personally . You can also mix white sugar and brown sugar. Get creative with it!

You can replace the milk with any type of non-dairy milk you like. I usually use cow milk, soy milk, or almond milk and they all work perfectly, only changing the taste slightly

If you’re replacing the egg look for my post about egg replacement or if you already know just use your prefered egg replacer for 1 egg.
