Cook It!: CSUMB students were challenged to display low cost (under $12), nutrient rich, quick meals (less than 20 minutes) as doable for average students. Value was added by using fresh, "real food" instead of processed, packaged foods that also reduce our carbon footprint by using less paper and plastic. Cooking to learn also challenged students' ability to shoot and edit using technology as a means of representing their knowledge of nutrition from Wellness and Nutrition courses taught by Instructor Denise Castro.

This class activity was intended to generate interest in cooking fresh food from scratch instead of defaulting to fast food or junk food. The small group collaboration was designed to promote an action plan, to shop, prepare, cook, serve (eat) and produce cooking videos to promote healthy eating choices.

What you see here is the beginning of a video collection from 4 different Kinesiology classes that can now serve as inspiration for future videos, or simply to build interest in expanding on healthy recipes and a repertoire of quality food choices in the student community at CSUMB.
