Vegetarian Pesto Rotini w/ Roasted Squash and Smashed Chickpeas
Ingredients:
1/2 box rotini pasta
1-3 squash (depending on size)
olive oil for cooking
1 can chickpeas
salt + pepper to taste, 21 seasoning salute (optional)
For Pesto:
1-2 cups basil leaves
1-2 cups spinach
2 cloves garlic
1/2 cup walnuts
1/2 cup parmesan cheese
juice of 1/2-1 lemon
1/2-3/4 cup olive oil
salt + pepper to taste
Preheat oven to 400 F.
Slice squash into half moons, toss with olive oil + seasonings on one half of baking sheet
On the other half, toss one can chickpeas with olive oil + seasonings. Put in oven for 15-20 mins.
Boil water for pasta. Salt. Add pasta once boiling.
Make your pesto! Add basil, spinach, garlic, walnuts, lemon juice, parmesan, and olive oil to blender or food processor. Blend until smooth. Add salt + pepper to taste.
Drain pasta after required time boiling is done. Take squash and chickpeas out of oven.
Using large fork, smash chickpeas until slightly crumbly.
Mix your pasta, pesto, squash, and smashed chickpeas together. Top with more parmesan and freshly cracked black pepper.
