James started his love affair with Middle Eastern cuisine 15 years ago by making falafel at a Jordanian guy's stall in Borough Market. He since took over that business and blew it up by opening several market stalls, selling their products in retail, running the longest standing concession in Selfridges Foodhall, and opening two permanent restaurants one in Borough and the other in Kings Cross's Granary Square.
