James’ guest today is one of Cornwall’s most loved chefs, Jack Stein, Chef Director at Rick Stein Restaurants. In this conversation, Jack shares how he kicked off his cooking career by helping at his dad’s restaurant in school holidays, what it was like growing up in Cornwall and how it’s changed since the 90’s, top tips for cooking fish at home and how he finds working with his family at one of the UK’s most successful seafood restaurant groups.
