    Wade Troung was that kid you see in an ethnic restaurant doing homework in the corner. He grew up in the restaurant business and has done everything from prep to front-line cook to top drawer executive chef. He has run the back of the house and the front of the house. He has done every culinary job, including managing a wine shop. Currently, he hangs his hunting gear and kitchen tools in Fredericksburg, Virginia just a little bit south of D.C. Truong is focusing on the brand and company that he and his partner have: Elevated Wild. He is zeroed in on doing the stuff he loves, cooking wild food and exploring the idea of what food is.

    He lives in a comfortable spot just outside of Little Rock, Arkansas, which is in Central Arkansas, small town of about about 25,000 people. He grew up in a in a small town down in Southeast Arkansas, where the population now is about 6000. He knew everybody in my graduating class there (150 years ago--he says--whenever that was), but through his career, he's moved around different parts of Arkansas, and says he's kind of settled in the in the twilight of it now having been in law enforcement now for 31 years. He says looking forward to retirement and just doing more stuff outdoors and spending time with family and those will hound dogs.

    He's living a proper Southern outdoorsman's dream complete with the coon hunting Treeing Walker and best four-legged friend––Waylon.

    It is a fun conversation...
