    In episode 8 Mark travels to Las Vegas Nevada in search of adventure, before hitting the roads of the American Southwest and Mexico with returning show guests Mauro Manente,  Mikey Lopez and a ragtag crew of misfits and malcontents for the 2021 El Diablo Run.

    Metal Fabricator and Human Atlas Mike 47  speaks with Bill about all things EDR,  Route planing, the challenges of desert travel and his Evo Sporty claptrap "The Boltster".   

    Mauro unfolds the legend of indestructible party machine Dutch Rob. Our hard riding, hard living friend from the Netherlands.

    Mikey Lopez shares his philosophy on food, drink and the best ways to end an epic motorcycle road trip. 

    Garlic Butter Brazilian Steak
    1 lb skirt steak

    salt and pepper for taste

    6 tsp minced garlic Add half if you like a less garlic flavor 
    ¼ cup chopped parsley 
    5 tbsp unsalted butter
    salt to taste for the butter 
    INSTRUCTIONS
    1.  Cut the steak into 3 or 4 parts. Pat the steaks dry then season both sides liberally with salt and pepper
    2.  In a heavy duty skillet large enough for the skirt steak, heat oil over medium-high heat until it’s very hot. Add the steak and sear both sides (brown both sides) for 2-3 minutes until medium rare or cook longer until your desired doneness.

    3. Place steaks to rest on a plate and cover with foil. 
    4.  In a skillet melt the butter over low heat then add the garlic. Cook swirling or using a spatula to move the butter and garlic around until lightly golden. Don’t over cook this shit. it's butter and garlic not meth.
    5. Pour the garlic butter into a bowl and salt to taste. Slice the steak against the grain. Garnish with parsley and then spoon or pour the garlic butter over the steak. Serve immediately. 
    NOTES
    Cook Tips
     
    Steak
    Cut the steak into 3 equal parts cook each side for about 4 mins.
    Do not move the steaks around as they cook. Leave those m***********s alone to sear for f***s sake.
     
    Garlic
    use 6 tsp of finely minced garlic.

    Cutting the steak
    Make sure you cut against the grain of the steak. If not, your steak may be tough. Cutting against the grain will make it nice and tender.

    Course: Main Dish, Starter
    Cuisine: Peruvian

    Servings: 4 
    Calories: 128kcal
    Ingredients:
    1 pound medium shrimp peeled and deveined
    1 pot water
    2 tablespoons salt
    ¾ cup Lime Juice
    ¾ cup lemon juice
    1 cup finely chopped red onion
    1 minced serrano chili seeds and ribs removed
    1 cup finely chopped cilantro
    1 chopped cucumber peeled and seeded
    Instructions:
    Bring a large pot of water (around 4 quarts) to a boil and add 2 tablespoons of salt. Add the shrimp and cook for 2 minutes. Keep a watchful eye on the shrimp as overcooking it will turn it rubbery. Remove the shrimp and place it into a bowl full of ice to stop it from cooking any further.
    Drain the shrimp and cut it into 1 inch long pieces. Place shrimp into a large bowl and add the lemon and lime juices. Cover with cling film and place in the refrigerator for half an hour.
    Mix the red onion and serrano chili and refrigerate for another half an hour.
    Add the cilantro and cucumber before serving.
    Pairs best With: Chenin Blanc

    In episode 6 Adventure is afoot as Mark makes plans to attend the 2021 Biltwell El Diablo Run, talks about some of the messed up shit he's seen at night in the Mojave desert of southern Nevada and puts down some mileage on his long suffering Dyna.

    Bill interviews Mauro Manente and Mikey Lopez about their experience traveling the  desolate roads of the Baja Peninsula and the trials and tribulations of organizing a trip through this unforgiving desert region.

    Mike speaks about the origin of his 47 industries rigid scrambler build, his harrowing 2019 Motorcycle crash on the road to the last EDR and why he's the most death proof motherfucker on two wheels.  Along the way we'll hear his exciting account of flying shoes, improvised  emergency roadside repairs and gas station first aid.
     
    Mauro discusses putting together a survival tool roll, the power of gorilla tape, his much loved 1982 Harley Davidson Shovelhead FXR and newer Dyna Low Rider S.

    In his closing statements Mark reminds us to take a chance on life and not be afraid to gamble with death.


    Recipe for Mexican Street Tacos (They've been places and seen things that can't be unseen)

    Skill Level: Easier then yo mama

    Course: Lunch, Dinner

    Calories: a few...

    Serves: 6 People

    INGREDIENTS:
    2 tablespoons reduced sodium soy sauce
    2 tablespoons freshly squeezed lime juice
    2 tablespoons canola oil, divided
    3 cloves garlic, minced
    2 teaspoons chili powder
    1 teaspoon ground cumin
    1 teaspoon dried oregano
    1 1/2 pounds skirt steak, cut into 1/2-inch pieces
    12 mini flour tortillas, warmed
    3/4 cup diced red onion
    1/2 cup chopped fresh cilantro leaves
    1 lime, cut into wedges

    INSTRUCTIONS:
    1. In a medium bowl, combine soy sauce, lime juice, 1 tablespoon canola oil, garlic, chili powder, cumin and oregano.

    2. In a gallon size Ziploc bag or large bowl, combine soy sauce mixture and steak; marinate for at least 1 hour up to 4 hours, turning the bag occasionally.

    3. Heat remaining 1 tablespoon canola oil in a large skillet over medium high heat. Add steak and marinade, and cook, stirring often, until steak has browned and marinade has reduced, about 5-6 minutes, or until desired doneness.

    4. Serve steak in tortillas, topped with onion, cilantro and lime.

    Recipe for Pan-Seared Steak 
    Skill Level: F*****g Easy 
    Course: Dinner, Main Course, Breakfast or Anytime 
    Calories: 542 kcal (Really?)
    Serves: 2 people

    Ingredients:
    2 lbs New York Strip Steaks (2 steaks) or Ribeye or Top Sirloin Steaks (1 lb each steak, 1 1/4” thick)

    1/2 Tbsp vegetable oil or any high heat cooking oil like canola or extra light olive oil

    1 1/2 tsp sea salt

    1 tsp black pepper freshly ground

    2 Tbsp unsalted butter

    2 cloves garlic peeled and quartered

    1 sprig fresh rosemary
    Instructions:
    1. Thoroughly pat steak dry with paper towels. Just before cooking, generously season with 1 1/2 tsp salt and 1 tsp black pepper

    2. Heat the cast iron pan until hot then add 1/2 Tbsp oil over medium-high heat, swirling to coat. Once the oil is very hot, add steaks to the skillet. Sear the steaks on the first side for 4 minutes until a brown crust has formed then flip and cook another 3-4 minutes. Using tongs, turn the steak on its sides to render the white fat and sear the edges (1-minute per edge).

    3. Reduce heat to medium and immediately add 2 Tbsp butter, quartered garlic cloves and rosemary to the pan. Spoon the butter sauce over the steak, tilting the pan to get butter on your spoon. Continue spooning the sauce over the steak for a minute or until the steak is about 5-10 degrees from your desired doneness (the temperature will continue to rise another 5-10 degrees while steaks rest).

    4. Transfer steak to a cutting board, loosely cover and rest 10 minutes before slicing into 1/2" strips to serve. Spoon extra butter sauce over sliced steak to serve.

Terrific, free-wheeling discourse

Informal and addictive discussion for motorcycle enthusiasts (mostly Harley centric). It's got a little bit of everything, industry news, riding anecdotes, and interviews with their equally passionate riding associates. Great listening for anyone who loves the life on two wheels.
