Ep. 30 Ernie Watkins (@konfuciouseats) - From Kits to Opening a Ramen Restaurant all during Covid

In May of this year, Ernie was a sushi chef who had just begun selling ramen kits to supplement his income due to his hours being cut by Covid-19. Fast forward 5 months later, he is in the final stages of opening Modesto's first craft ramen shop. In this episode, I wanted to catch up with Ernie and see how he's gone from kits to his own shop in such a short time. Covid has been incredibly difficult for so many in the restaurant industry. Ernie's story is one of the few bright spots of someone doing everything he can to make lemonades out of the lemons of 2020.

If you'd like to support Ernie's dream you can visit his Kickstarter page. He's fully funded but he still has some sweet rewards.

Ep. 29 Alex Ryutaro Aramaki (@gyopara) - Talking Ramen with a Third Generation Ramen Chef

Ep. 29 Alex Ryutaro Aramaki (@gyopara) - Talking Ramen with a Third Generation Ramen Chef

On today’s episode I sit down with Alex Ryutaro Aramaki who runs a shop in Vancouver British Columbia called gyopara. Alex is actually a 3rd generation ramen chef, with his grandfather actually operating a ramen shop in post war Japan in the 1950s which I thought was quite rare.  After he helped open a few ramen franchises in the BC area, namely Jinya and Danbo, Alex brought back Gyopara which was his dad’s restaurant from the 90s with the intent of making food from scratch which if you listen to this podcast a lot you’ll know isn’t all that common with many ramen restaurants outside of Japan. In this episode we get into his family’s history with ramen, his work with opening up past ramen shops, maki and also his tips for making better ramen.

Ep. 28 - Alex Park (@darth.gastrameny) Chatting with one of the OGs in the Western Ramen Scene about burnout

Ep. 28 - Alex Park (@darth.gastrameny) Chatting with one of the OGs in the Western Ramen Scene about burnout

In today’s episode I still down with one of the OGs of the little internet ramen community. Alex park, who also goes by @darth.gastrameny on Instagram, is a traditionally trained chef who has been the ramen scene for around 10 years. With 17 years working in professional kitchens, Alex has skills that many of us home ramen cooks are pretty far from developing on our own and it really reflects in the ramen he makes. In this episode, he talks about his philosophy for making ramen and what senses he uses to critique his own cooking. He also opens up on the realities of working in these high-pressure kitchen environments.  It’s rare for anyone to be as honest as Alex is in this interview so for any aspiring chefs out there, this might be a great listen for you.

just as a heads up, There’s a lot of swearing in this episode, if you have kids and don’t want them to hear that stuff, best listen to this one with headphones.

Ep. 26 - Shigetoshi Nakamura (@nakamura.ratube) - Chatting with one of the BEST Ramen Chefs in the Country!

We have a, truly incredible guest on the show today. I have no idea how this happened, but we have Nakamura-san, Shigetoshi Nakamura from Nakamura NYC on the show today. For those of you who are unfamiliar with Nakamura-san, he is widely considered to be one of the top ramen chefs in the United States. He opened his first shop at the age of 22 in Japan and became known as a rising star after being featured in ramen magazines. He then went on to help his brother create the menu at the mega-successful ramen chain Afuri.

In this episode we talk about his history with ramen, his philosophy on what chefs should focus on when making ramen, the differences between making ramen in a restaurant and making ramen at home, and where he thinks and hopes ramen will go in the west.

This was an incredibly insightful interview with a true master of ramen. I learned a lot and I hope you enjoy this one. Alright here is chef Shigetoshi Nakamura.

Ep. 25 - Black Dynasty Ramen (@blackdynastyramen) - Kodawari Ramen with Southern Flair

Black Dynasty Ramen is a secret ramen shop in Nashville Tennessee doing Kodawari ramen with regional southern ingredients. Been a big fan of their approach to making ramen and what these guys have been doing. Their passion for food and ramen is infectious and I had a great time talking with them.

Ramen in-depth

In depth, insightful, informative, long discussions on everything ramen. Great guests with different perspectives and different levels of experience covering the basics to the minutiae. I recently took over a ramen restaurant and this pod has been really helpful in educating myself and developing my own understanding of the craft and art of ramen.

Lighting a Fire

This podcast is stoking the flame of my love for ramen and my inspiration to try to make it at home again. The two times I’ve tried before it was so bad and took so much work I just stopped. I still try to eat at the best shops whenever I travel but gave up making it. Now I’m super stoked to try again and keep trying.

Thoughtful and well made

This is a great show that talks about real details on all things Ramen. I’m glad to have found this show. As a ramen shop owner based in nyc, I will continue to listen to stay on top of the trends in my craft.
