Around 150 species of plants (among which more than three dozen different varieties of tomatoes), biodynamically grown over five hectares of land irrigated with mountain spring water, and cared for according to the cycles of the Moon… In Menton, a stone’s throw from the Italian border, Mauro Colagreco oversees a gigantic garden that directly provides the kitchens of his three-Michelin-starred restaurant with fresh fruit, vegetables, herbs and edible flowers. The goal: to celebrate the beauty of the French region he has chosen to settle in, but also to encourage the consumption of local products, at a time when a majority of people living in cities mostly eat over-processed food, often imported from across the globe.
