Cooking South Indian style BlackEyed peas.
Things Needed
Onion- two medium sized Tomatoes- one small sized Garlic - 6-8 pods
Curry leaves- one small sprig Fenugreek seeds- 1/2 tsp Mustard seeds- 1/2 tsp Cumin seeds- 1/2 tsp
Oil of your choice- Two to three tablespoon
Pulp extracted from tamarind-optional and add to your preference
Things needed for making coconut paste
1/4 cup of dessicated or fresh coconut Cashew nuts
2-3 tablespoon onion chopped
Cumin seeds- 1/2 tsp
`Grind all together in a blender to a smooth paste
Spice powder mix
• 3 cups Coriander (Dhania) Seeds
• 1 cup Arhar dal (Split Toor Dal)
• 1/2 cup Chana dal (Bengal Gram Dal)
• 1/4 cup Methi Seeds (Fenugreek Seeds)
• 1/4 cup White Urad Dal (Whole)
• 1/4 cup Mustard seeds (Rai/ Kadugu)
• 1/4 cup Red Chilli powder
• 1/4 cup Turmeric powder (Haldi)
• 1/4 cup Whole Black Peppercorns
• 2 tablespoons Cumin seeds (Jeera) -
Cooking a North Indian Vegan meal.
Enjoy cooking a balanced North Indian Vegan meal consisting of cauliflower potato side, Green gram dal Curry, Roti and Rice. Green gram dal Curry
Onion - 1 medium sized
Tomato- 1 chopped
Ginger Garlic paste- 2 teaspoon
Cumin seeds- 1 Teaspoon
Turmeric powder- 1 teaspoon
Cumin powder- 1 teaspoon
Garam masala/all spice powder- 1 Teaspoon
Salt to taste
Water-1/4 cup+ more to dilute if the dal curry is too thick
Cauliflower Potato side
Cauliflower - half of one medium head
Potato- 1 large potato
Cumin seeds- 1 teaspoon
Oil- 1 tablespoon
Cumin powder -1 teaspoon
Coriander powder - 1 teaspoon
Turmeric powder - 1 teaspoon
Water- 1/4 cup or as required until the verges turn tender
Roti
Whole wheat flour- 1 cup
Salt- 1 teaspoon
Water- as required
Rice
Basmati/ponni/sona masoori- 1 cup
Water 2-3 cups -
Curd vegetable curry and chicken soup.

Mutton Bone Broth
Mutton Bone Broth is filled with nutrients to regain strength after an infection and has been used in southern parts of India for a very long time now. Spice Powder Mix. Mutton bones- 500 grams. star-anise- 5-6. Cinnamon- One Stick. Cardamom-5-6. Corriander Seeds- 1 Tablespoon. Cumin Seeds- 1 teaspoon. Cloves-5-6. Dry red chillies- 3-4. Mushroom Masala
Garam masala recipe 1 tablespoon cumin seeds
2 tablespoon coriander seeds
2 -3 cardamom
Quarter of an inch cinnamon
6-8 ground pepper
4-5. cloves
Mildly roast on a shallow pan and then Grind them to a powder in a mixer.
Fritters
Chopped cabbage- 2 cups
Chopped mushroom-1 cup mushroom
Corn flour- 1 cup
