Paula tells her story of what it was like being vegan in culinary school. She explains the challenges she faced with her chefs and classmates. Regardless she is grateful that her schooling has given her the skills to excel in her plant-based cooking. While going over the cooking techniques that she finds essential, she comes to the realization that culinary should be taught to everyone in schools.
