Love the talk about stats!

Hey Dave and team,

Thanks for making such a great show. I look forward to it every week.

I especially love the sports talk and statistics. I too am trying to integrate as many statistics as possible in my restaurant to help us run better and better.

I’d love for you guys to do a whole pod about what kind of statistics you guys use or are trying to use!

Ask Dave: Food costs are one of the most basic statistics we can all track, what’s your strategy when it comes to this? A mix of low margin “loss leader” dishes with high margin dishes or an even across the board percentage food cost play? Is having a high cost ingredient like wagyu at an affordable price (to attract customers and provide perceived value) as stupid as punting the ball or taking a perimeter 2 point shot in your opinion? Is that why you get angry at Josh Skenes from under pricing his menu for certain dishes?

P.S. next time you are in Sydney we’d love to have you at our restaurant YAN. Like some of your places, we located ourselves in the “stupidest” location where nobody would open a restaurant and it seems to be working out recently receiving one hat.

Regarding breakfast lunch and dinner

Congratulation on the new series on Netflix breakfast lunch and dinner it reminded me a lot of the late and so special Anthony Bourdain. It carried the same seemingly unscripted show that visits the houses and the streets of the cities you visit.
