I had the pleasure of catching up with an old friend. Ivan Vasquez is a true inspiration for immigrants. I got the chance to hear his 

story of how he came to the United States from Oaxaca. From there he told me about his path to owning the largest Mezcaleria in the United States. No matter where you begin hard work and aspirations will take you wherever you want to get. 

Mezcal is the mother of tequila. There are 9 regions in Mexico that mezcal can be made in and it’s still growing. 90% of the production comes out of Oaxaca which is were Ivan is from. With over 150 species of agave around 30 types of agaves  are used to making mezcal currently and only 1 for making tequila. 

The process of making mezcal is: harvesting, cooking it underground, mashing it, double distilling in either copper or clay, and bottle in it or aging it.
