Growing up in the south-west of Sydney, Paul wanted to play professional footy – but found his calling in another arena – the kitchen of some of the world’s finest restaurants – where the rough and tumble of the playing field translated across to the intensity of the foodie scene – fighting hard for the call up to the big time and pushing yourself to the absolute limit to stay in the game.

But this life took its toll and with the arrival of a global pandemic, Paul stepped back to find balance – one that allowed him to deploy his talents, and those of his community on mass, and still create space for family time.

Paul’s story is one that feels familiar and how identifying the sliding doors moments that shape our lives can turn opportunities into long term possibilities.
