    Ferm Foundations - Mark McDonough and Nathan Santichen

    This episode features Mark McDonough and Nathan Santichen of Ferm Foundations. About 3 years ago these childhood friends began selling their kimchi at farmers markets. Nate grew up makingsaurkraut with his family for New Years. They would make about three hundred pounds and give it out to their friends and family. Nate developed a love of fermenting which sent him down a rabbit hole. He made hot sauce, soy sauce and even miso and chocolate. Finally he discovered kimchi. From there he took his expertise and sought to refine and put his stamp on this wonderful fermented creation. Mark provides his experience and knowledge spices and flavors to help add an intense complexity to this Korean icon. Nate and Mark's expressions are like nothing you've ever tried. Crunchy...     Tin City Distillery - Patrick Brooks

    This episode features Patrick Brooks of Tin City Distillery. Tin City Distillery, In Pasa Robles, CA, is "in the heart of a drinking town with a farming problem". After you make world class wine you distill it into brandy. The idea for the distillery came way too late at night while drinking wine. They decided that instead of dumping all of the grape juice down the drain they were going to create brandy from it. The next step was create their own brand and their own distillery. Their still originally came from a 55 gallon Fuji film canister. Today their on their forth still iteration a 375 gallon copper pot still. It resides on and small farm which boasts and orchard and tasting room. The cider bug bit Pete very early on. He grew up on an apple farm in Western New York. Apples are in his blood.     Broken Shed Vodka - Mark Simmonds

    This episode features Mark Simmonds of Broken Shed Vodka. It was in 2009 that two Americans came down to Lake Wanaka on holiday. They fell in love with New Zealand. They were drinking vodka martini's with Mark and the asked the question. "Why are we drinking these with imported vodka?" Mark has twenty five plus years of experience under his belt making booze. Conversations ensued and a plan was created to take vodka made in New Zealand to the United States market. They developed a recipe for their vodka that is produced from whey. Through product development and trial and error, the resounding favorite, in the shed was the iteration that we enjoy today.
