    Amy Probasco

    This weeks guest is Amy Probasco who joins us from Chicago, Illinois. Amy has been a hospitality professional for nearly two decades. A Virginia native, she has worked throughout the country in high volume clubs, award-winning restaurants, and nationally recognized craft cocktail bars. Named by the Chicago Tribune as one of city's top bartenders in 2012, she went on to establish the bar program at the James Beard Awarded Girl & the Goat restaurant and implement bar systems and operations for the opening of Soho House Chicago. Amys's cocktail recipes have been featured in Forbes, Good Housekeeping, Cosmopolitan, and Punch magazines. Though working in bars and restaurants will always be her first love, Amy has enjoyed traveling the country as a cocktail consultant - helping streamline beverage programs, create focused drink menus, and lead trainings on cocktail technique and spirits history. Amy is currently an in-house mixologist for Beam Suntory, managing the bar at their North American Headquarters in Chicago.     This weeks guest is Josh Lindley who returns to the show. Josh began his spirits quest in 2006 after short stints in the broadcasting and music industries. Josh has worked behind bars at notable Toronto establishments like Bar Isabel, Chantecler and Civil Liberties. Josh also worked as brand ambassador for an unusual gin. In 2016 he and life partner, Jessica Blaine Smith, created Bartender Atlas, a worldwide online directory of bartenders. Together, they travel the globe tasting exciting cocktails made by the most passionate bartenders. Jessica and Josh are also co-creators of the Toronto Cocktail Conference and execute events for bartenders and cocktail enthusiasts all over the world. In 2023 Josh made a Spirited Awards Top Ten Nominated Podcast called “The Blackbird” and in 2024 he made sequel called “The Shaft”. Josh’s preferred style of drink is “bitter and stirred” and his preferred style of music is “desperate”. **WHAT IS THE SHAFT? ** In 2022, Bartender Atlas traveled to Victoria, British Columbia to visit some old friends and taste some of the city’s most interesting cocktails. Jessica and Josh found what they were looking for and more. One thing in particular was a cocktail known as “The Shaft”. This creamy coffee concoction was entirely new to the Bartender Atlas crew. Jessica Josh needed to know where it came from and how it became so ubiquitous in this Western Canadian Capital. What they found out was that there is nothing simple in the story of this three ingredient drink. Trained and raised in Waterloo, Ontario, David Schaub spent a decade learning his craft in the area’s restaurants, caterers, and butcher shop. Most notably, Dave spent nearly five years at Bhima’s Warung, learning the foundations of his career. Settling in Ottawa in 2010, Dave worked his way through some of the city’s kitchens before perfecting his ketchup recipe at The Black Cat Bistro.
