Good subject, good rapport. HOWEVER, believe it or not — how the episode is Engineered Is extremely important. Listeners have become totally spoiled, in that sense. Even if you are out-of-doors, they expect a studio-quality sound (which actually does get done nowadays).
First of all, before you even start, your subject HAS to get a sample of the different ways that he may sound — and then he can make adjustments to achieve his personal best. POST-production: if somebody rattles on at a mile-a-minute — professional equipment can Slow Him Down in the re-mix, just enough that he sounds user-friendly, while still sounding like himself. Professional engineering helps Everyone to sound like His/Her Best self. This encourages your subjects to Spread the Word, and makes potential new subjects feel happier about being asked.
