The importance of working in informal markets this World Food Safety Day
June 7th is World Food Safety Day!To learn more about food safety, Paul spoke with Silvia Alsonso, a Senior Scientist and Veterinarian at the International Livestock Research Institute (ILRI). ILRI is part of a dedicated global effort to improve food safety through research projects focusing on livestock in developing countries.
In this episode, Silvia discusses the importance of research for improving food safety in the global south, particularly in informal markets that comprise the majority of food supply systems in the developing world. She also explains how targeted interventions can benefit local communities and provides a rundown of a successful project she worked on in Kenya focusing on milk.

For today’s episode of Future Fork, Paul caught up with Amelia Christie-Miller. Amelia is the Founder and CEO of Bold Bean Co and the author of ‘Bold Beans’.
Today, Amelia shares how a chance encounter with high-quality heirloom beans in Spain changed her long-held feelings about beans and put her on a path to bean advocacy. As a big believer in beans, she explains the cultural significance of beans in Spain, the journey to starting her own bean-based business, and how she hopes to generate more love for beans through Bold Beans Co and her cookbook ‘Bold Beans’.

Feeding the people of tomorrow means making changes today
Paul’s guest today is Oliver English. Oliver is the Co-founder and CEO of Common Table Creative. Oliver and his brother Simon worked together to create ‘Feeding Tomorrow’, a documentary about working to transform a broken food system.
As a trained chef and advocate for food, Oliver has a unique perspective on the power of storytelling and food. In today’s episode, he shares his experiences making the film and interviewing farmers making a difference in the world. He also discusses how and why he transformed his front garden into a permaculture experiment.

Modernising millets and embracing traditional foods
Paul is joined today by Anahita Dhondy. Named ‘30 Under 30’ by Forbes Asia, Anahita is an award-winning Chef and Author of “The Parsi Kitchen: A Memoir of Food and Family”. She is a proud member of the Chefs’ Manifesto network, a champion for Parsi food, and advocates for ingredients that are good for people and the planet.
Today, Chef Anahita will share her journey as an advocate. She discusses how it often takes time for a message to break through the noise and how Masterchef allowed her to speak to millions of viewers about her advocacy work. She also opens up about how embracing her culture led to her dedication to modernising millets.

Shifting the perception around beans
