Elite 8 Showdown taught me everything I know about wrestling
Take a pound of chicken. Use breasts or thighs. Doesn’t matter. Cube it into 1/2inch pieces. Throw it in a hot pan with some oil. Salt/Pepper/Garlic Powder/Onion Powder and a good amount of Cumin. While it’s cooking cut up an onion and dice a pablano. Once the chicken is done put it in a bowl to the side.
To the same hot pan throw in the onion and pablano. Get some color to the onion, throw in a good amount of minced garlic, cook a little, toss in a can of corn. If you need more oil, and you probably do, throw in 2TBSP of butter. Season with Salt, a little Cayenne or chili powder. Taste and adjust as needed.
While that’s simmering, combine a cup of sour cream with 3TBSP of lime juice. Taste and add more lime if you like.
In a smaller pan, heat up about 3 or 4 corn tortillas per person.
Make Tacos. You could Add shredded cheese on top too. I always add hot sauce on mine.
