    Cookie recipe
    2/3 cup vegetable shortening.  (original-flavor, solid vegetable shortening)  2/3 cup cup white, granulated sugar 2 large eggs 1 and 1/3 cup honey (about one pound) 5 and 1/2 cups of all-purpose flour 2 teaspoons of baking soda 2 teaspoons of salt  2 teaspoons of lemon extract  
    Directions:  In a large bowl, cream together the vegetable shortening, sugar, eggs, honey, and lemon extract until light and fluffy.  Sift the dry ingredients together and add them to the first mixture.  Stir until well-blended.  
     
    Refrigerate the dough at least one hour or overnight.  (I usually refrigerate mine overnight.)
     
    Preheat the oven to 375 degrees, and cover your baking sheets with either parchment paper or baking mats.  
     
    On a lightly-floured surface, roll the dough to 1/4-inch thickness with a rolling pin.  Cut the dough into shapes and place them 1 inch apart on the lined baking sheets. Bake 8-10 minutes or until you can poke them with your finger gently, and not leave an imprint.  Note:  baking times may vary by oven and baking sheet type (light vs dark). 
     
    Frosting recipe
     
    1/2 cup soft butter (not melted) 4 1/2 cups powdered sugar 3 teaspoons lemon extract  3 tablespoons milk  
    Directions:  In a small bowl, combine the butter, powdered sugar, and lemon extract with enough milk to make the frosting easy to spread.

    Today’s episode is an interview with Katie Hunt Thomas. She is the Disability Rights Attorney for the Ability Center of Greater Toledo, a Center for Independent Living in northwest Ohio with the mission to assist people with disabilities to live, work, and socialize within a fully accessible community.  
     
    Episode 5 of The Perrysburg Podcast featured census data.  According to census.gov/quickfacts (from 2017-2021), 6.4% of Perrysburg residents under the age of 65 have a disability.  
     
    In this episode, Katie talks about the types of disabilities people in Perrysburg have, what makes Perrysburg disability-friendly, areas for improvement, and how The Ability Center of Greater Toledo can be a resource for Perrysburg residents.
