Feeling inspired? In this episode of the Fretz Friends VT Podcast, we welcome Dr Barbara Pelletier and we talk about good, healthy, food. Dr Pelletier and Dr Laurie Capogna co-authored Eye Foods: A Plan for Healthy Eyes and Eye Foods for Kids: A Tasty Guide to Nutrition and Eye Health. While the original books are no longer in print, Dr Capogna has gone on to write another book Eyefoods: The Complete Eye Health and Nutrition Guide so be sure to check it out.
Barbara also shares how Eyefoods came to be and if you are thinking about a book, Barbara offers ideas to get you started.

April has a delicious favourite salad if you are thinking about lunch:
Season some sweet potato with cinnamon, pepper, salt and olive oil. Roast the sweet potato, add it to kale, pomegranate seeds, grated carrot, pecans, dried cranberries and avocado. Dress with olive oil, balsamic vinegar, soy sauce Dijon mustard and maple syrup. Enjoy

April a une recette délicieuse de salade si vous pensez déjà au dîner :
Assaisonnez des patates douces avec de la cannelle, du sel, du poivre et de l’huile d’olive. Faites griller les patates douces, ajoutez-les à du chou frisé, des carottes rappées, des graines de grenade, des pacanes, des canneberges séchées et de l’avocat. Pour la vinaigrette, utilisez de l’huile d’olive, du vinaigre balsamique, de la sauce soya, de la moutarde de Dijon et du sirop d’érable. Bon appétit !!
