  1. Chris McCausland enjoys our cottage pie and a ginger beer

Chris McCausland enjoys our cottage pie and a ginger beer

We welcome a man with clear rules on food! Chris McCausland is a comedian, author, and Strictly Come Dancing champion. Within minutes of sitting down with Nick and Angela, he’s critiquing the Dish chair and explaining the mathematical shape of a Pringle, setting the tone for a brilliantly entertaining episode.  Chris is one of the busiest people on the circuit, with his tour Yonks spanning years, multiple legs, and even multiple shows in a day. Alongside that, his memoir Keep Laughing tells the story of his life, from growing up in Liverpool and losing his sight, through to becoming one of the UK’s most loved stand-ups. He tells us how the book came together without a plan, why writing about his early life proved more interesting than his comedy career, and how Strictly opened him up emotionally in ways he never expected.  Chris is greeted with a cold Fentimans ginger beer and salt and vinegar Pringles – his favourite! Next up, Angela served a piping hot cottage pie using a recipe by Martha Collison, with a side of Savoy cabbage. The British classic was paired with a No.1 Viña Lorea Reserva Rioja to complement the rich, savoury meat and creamy potatoes. There is plenty of food chat along the way, from Chris’s deep love of Italian dishes like bolognese and pizza (a life-changing discovery at university), to his dedication to sausages on tour, balanced by what he calls “sausage dark days”. We also get into the gamble of hotel eggs, his theory about spice levels, and how mayo has taken over the sandwich market.  As for the cottage pie? A straight 10 from everyone!    You can watch full episodes of Dish on YouTube and on Spotify.  All recipes from this podcast can be found at waitrose.com/dishrecipes The recipe for the cottage pie was created for Waitrose by Martha Collison. 2. Tim Key, sticky sausage & apple braise, and a beer

    7 JAN

Tim Key, sticky sausage & apple braise, and a beer

Bangers and mash in action for our first poet. Tim Key, an English poet, comedian, actor and screenwriter, joins Nick and Angela to fire up Dish in 2026. Last year was a huge one for Tim, made notable by the release of The Ballad Of Wallis Island, a film he stars in alongside best friend Tom Basden. The pair wrote the screenplay together, basing it on a short film they had made nearly 20 years earlier. It has amassed critical and popular acclaim, winning three British Independent Film Awards.  Alongside The Ballad... Tim released a book of poems, L.A. Baby!, and launched his latest stand-up show Loganberry, which returns for a new tour across the UK from February. He’s a long-time collaborator with former Dish guest Steve Coogan, appearing with Coogan in Saxondale and a number of Alan Partridge projects.  Tim loves the pub, loves fish and chips, and believes he has worked out how to get the most out of Dish through his list of likes and dislikes. With a Five Points beer in hand, he is served sticky sausage & apple braise with a mash that, as always, becomes quite the talking point. Waitrose’s wine experts have paired the meal with a Château Maris Organic Les Planels. With poetry, laughter and stories about pub characters and eating in the bath, our first episode of the year is a bumper one to get us all going. And, in case you are wondering, Helena Bonham Carter is up next week for our final episode of Season 8.  You can watch full episodes of Dish on YouTube and, new for this season, on Spotify.  All recipes from this podcast can be found at waitrose.com/dishrecipes A transcript for this episode can be found at waitrose.com/dish If you want to get in touch with us about anything at all, contact dish@waitrose.co.uk  Dish from Waitrose is made by Cold Glass Productions Learn more about your ad choices. 3. Emilia Fox, a butternut and toasted pumpkin seed risotto, and a vodka martini

    31/12/2025

Emilia Fox, a butternut and toasted pumpkin seed risotto, and a vodka martini

We finish one year and start the next with an ode to good food.  Emilia Fox is an English actress and presenter. She is best known for playing Dr Nikki Alexander in the popular long-running TV series Silent Witness, a role she has been playing since 2004, when Nick was still at university and Angela was on TV with Gordon Ramsay in Hell’s Kitchen. Emilia is with us to chat about the upcoming series of the show (its 29th!!) which lands on BBC One and BBC iPlayer in early 2026. But before that, we have (just enough) time to go through Emilia’s likes and dislikes, which have been made into a novella with a limited print run... of three. Emilia is passionate about seasonal and Italian food, and could eat roast chicken every day, so immediately enters into Angela’s good books.  We begin the show by serving a perfectly chilled vodka martini with a twist. This is followed by a butternut & toasted pumpkin seed risotto, paired with a glass of Ricossa Barbera Appassimento Piemonte DOC. There’s no need for rice fear as Angela guides Emilia and Nick through her risotto method and top tips.  This is a heart-warming dish, recipe and guest with which to start 2026. We get Emilia’s love of great food, her stories of being a (very sackable) waitress and how she deals with dead bodies on set. Plus, a few thoughts for potential New Year’s resolutions. Bellissimo! 4. Jordan Stephens, saffron & cardamom chicken with cranberry salsa, and a vouvray

    10/12/2025

Jordan Stephens, saffron & cardamom chicken with cranberry salsa, and a vouvray

Croissants as a starter? No issue whatsoever.  Jordan Stephens is a musician, actor, presenter, podcaster and writer, who arrives at Dish off the back of an incredible year, full of achievements and firsts. He chats to Angela and Nick about the paperback release of his thought-provoking memoir, Avoidance, Drugs, Heartbreak and Dogs, a personal story of self-acceptance. Alongside events and talks to promote the book, Jordan has had a busy 12 months, making his theatre debut in Entertaining Mr Sloane, joining the hit podcast Miss Me? as its new host and presenting his first documentary for Channel 4.  He also returned to where it all started with Rizzle Kicks, who released their first album in 12 years alongside a UK tour and a performance at Glastonbury.  Angela serves up a warming dish of saffron & cardamom chicken with cranberry salsa, paired with a glass of Domaine Du Vieux Vauvert Vouvray. That’s preceded by a cup of Earl Grey tea and a croissant, which immediately showcases Jordan’s passion for food and ranking systems. Jordan’s girlfriend is friend-of-the-show Jade Thirlwall, so we get an even deeper understanding of her love of roasts and their plans for Christmas. We also hear how food brought Jordan one-step closer to his dream of making music, and there’s a return to our discussion on pet names. Please let us know if your dog is called Susan.   You can watch full episodes of Dish on YouTube and, new for this season, on Spotify.  All recipes from this podcast can be found at waitrose.com/dishrecipes The recipe for saffron & cardamom chicken with cranberry salsa was created for Waitrose by Noor Murad. 5. Vicky McClure, roast topside of beef with peppercorn gravy & aligot, and a bloody Mary

    22/10/2025

Vicky McClure, roast topside of beef with peppercorn gravy & aligot, and a bloody Mary

Angela’s first serving of aligot goes down very well with Nick and our brilliant guest. Vicky McClure is a BAFTA-winning actor known for her incredible roles in Line of Duty as Kate Fleming and This is England as Lol Jenkins. She joins Nick and Ange to talk about the third series of Trigger Point, the thriller in which Vicky plays Lana, a bomb disposal expert (known as an expo), struggling with trauma and PTSD. You can watch the show from 26 October on ITV and ITVX.  Vicky was born in Nottingham and lives there today with her husband Jonny, who is also an actor and filmmaker. The couple first met over a sausage cob, and it’s one of many areas of food and drink that Vicky feels strongly about, including tea and how to act with it correctly.  We begin the episode with Nick mixing up the first ever bloody Mary on the show ahead of a main course of roast topside of beef with peppercorn gravy & aligot. Aligot, a recipe made of potato and cheese, also makes its Dish debut... but definitely not its last, based on this reaction. It’s paired with a glass of Catena Malbec. Vicky brings pure joy to our table as well as her passion for her hometown and nighttime. We hear about working with Madonna and how she prepares for her demanding roles. And her second career path plan? Well, it’s right up our street. 6. Suranne Jones, seared tuna with braised tomatoes & chickpeas and a crumble

    08/10/2025

Suranne Jones, seared tuna with braised tomatoes & chickpeas and a crumble

We’re joined by a BAFTA winner for an easy-to-make, extra tasty dinner and a spoonful of dessert.  Suranne Jones’ acting credits are a must-watch list of shows including Doctor Foster, Vigil, Gentleman Jack and Coronation Street. Add to that list her new show, Frauds, a heist-driven thriller in which she stars alongside Jodie Whittaker.  On the menu for this episode is seared tuna with braised tomatoes & chickpeas, paired on this occasion with a Telmont Champagne Reserve Brut NV - a special accompaniment and a favourite of Suranne’s when she is drinking. This is followed by a perfectly seasonal autumn apple & blackberry crumble.  Suranne’s a bad influence in Frauds, but pure joy and excellent vibes around the Dish table, bringing a list of food likes and dislikes that matches, and maybe surpasses, the one brought by Benedict Cumberbatch. We get into the magic of Oldham, the power of Corrie and the appeal of Doctor Foster... and Suranne quickly comes clean that she’s a Dish superfan having listened to ALL episodes while on set for her new show. We salute you! 7. Mawaan Rizwan, pork & mushroom tantanmen and a vermouth cocktail

    01/10/2025

Mawaan Rizwan, pork & mushroom tantanmen and a vermouth cocktail

Nick and Angela welcome a performer whose surreal comedy has made him one of Britain’s most distinctive voices. Mawaan Rizwan’s career has been anything but ordinary, taking him from clown school to the Edinburgh Fringe. He created and stars in the surreal BBC comedy Juice, which earned him a BAFTA, and now he joins Nick and Angela to talk about the show’s new series. Mawaan likes a vermouth cocktail (when he’s feeling fancy), so Nick pours a Sharp Dresser to start.  Mawaan is also a big fan of ramen, so Angela serves a pork and mushroom tantanmen, topped with jammy eggs and spring onions. The dish is paired with a glass of The Dry Dam Riesling, whose acidity and creamy notes balance the richness of the broth. The conversation reflects Mawaan’s playful spirit, touching on his passion for Beef Wellington, the time he sculpted Paul Hollywood’s cheekbones in brandy snap, and even the unlikely showbiz “beef” he’s nursing with Ellie Goulding. He also lets Angela in on his burrata hack for levelling up instant noodles. 8. Lou Sanders, creamy mushroom & pistachio tagliatelle and a Brunello

    02/07/2025

Lou Sanders, creamy mushroom & pistachio tagliatelle and a Brunello

Nick and Ange are joined by a Last One Laughing star - and the Dish table sees its first proposal. Lou Sanders is a comedian, writer and podcaster who has appeared on TV shows including QI, Dancing on Ice, Would I Lie to You, Live at the Apollo and Taskmaster, which she won in 2019. She joins us at the tail end of her latest stand-up tour, No Kissing in the Bingo Hall, and following her iconic appearance in Last One Laughing.  Earlier this year Lou launched a brand new podcast, A Psychic Told Us To Do It, with her best friend Georgie Bayford. The show puts Lou’s passion for the spiritual front and centre, featuring chats about pet psychics, witchcraft, holistic foot therapy and manifesting. You can also read all about Lou’s life and career in her 2023 book, What’s That Lady Doing?. Angela serves a delicious creamy mushroom & pistachio tagliatelle, with a side of sauteed garlic and spinach. Our Waitrose wine experts suggest pairing this with a glass of  Val di Suga Brunello di Montalcino but, for Lou, it’s served with a glass of Thomson & Scott Noughty Rouge Dealcoholized Wine.  As you would expect, conversations in this episode roam freely, contemplating all the big questions: Is Lou in her gardening era?; Is her cat Bobert her husband from a past life?; And what is the deal with raw onion? Our tagliatelle dish is a vegan hit, earning Lou’s seal of approval right from the first sniff, and the Fast Food Quiz finally meets its match.  All recipes from this podcast can be found at waitrose.com/dishrecipes A transcript for this episode can be found at waitrose.com/dish We can’t all have a Michelin star chef in the kitchen, but you can ask Angela for help.  Send your dilemmas to dish@waitrose.co.uk and she’ll try to answer them in a future episode.
