Instead of the traditional ricotta filling, Christina puts a Greek spin on them with feta, mozzarella, fresh dill, mint, pickled cherry peppers, and lemon zest, then fries them in an incredibly light tempura batter and finishes them with lemon and a drizzle of honey. As Christina cooks, she breaks down the tricks to making great tempura at home: keeping your liquids ice cold, using vodka and club soda for a light, airy coating, resisting the urge to overmix, and frying at the right temperature.     Today on Chewed Up, Michael Symon, Carla Hall, and Clinton Kelly are back for a second frozen pizza taste test, putting six frozen pizzas to the test to find out which ones are actually worth keeping in your freezer. They compare crust, chew, sauce, cheese, pepperoni, fresh versus dried herbs, and whether any of them can come close to the kind of pizza they actually want to eat. As they work through the lineup, some pizzas are too doughy, too sweet, under-seasoned, or overloaded with dried herbs, while others surprise them with a crisp, properly blistered crust and fresh mozzarella. By the end, the group debates whether better dough or better toppings matter more when choosing the winner. Then Clinton makes his go-to homemade Caesar salad dressing with garlic, anchovy paste, Dijon, Worcestershire, lemon, olive oil, Parmesan, and plenty of black pepper - the perfect side for pizza night. Carla puts that idea into practice with a peach galette made with a savory curry crust, ripe peaches, brown sugar, ginger, cinnamon, lemon, almond, and a little jam to boost the fruit when it needs extra sweetness.   As she builds the galette, Carla and Michael break down why recipes should be treated as guides instead of rigid rules, how to adjust fruit depending on sweetness and acidity, and how one solid dough technique can be adapted into endless sweet or savory variations.
