Great work Eric. As a server of 20 plus years in the business who wants to open my own establishment, you have re-inspired my love of hospitality. Hearing from people who have the same core values, views and passions after working along side so many who don’t make me realize that there is a place for my views. As well hearing the stories of how many of these guests have built themselves up from humble beginnings makes me feel as though it is possible for me. And last the deep dives give insight into the areas where I know little and that it is ok not to know as long as I am willing to learn and employ those who do know.
