    Links House / Exploring the UK's most northerly luxury hotel

    In Dornoch, on the far north-east coast, Links House began life in 1843 as a manse for a Free Church minister. It served as officers' quarters in the war and stayed a private home for generations after. Today it stands a short pitch from the first tee at Royal Dornoch, one of the world's great links courses, and holds a Michelin Key as the most northerly five-star hotel in the country.     Newhall Mains / From a building at risk to a Highland hotel with its own airfield

    On the northern edge of the Black Isle, half an hour from Inverness, Newhall Mains is an 18th-century farm steading built around a sandstone courtyard - the "Mains" being the old Scottish word for the working heart of an estate. Not long ago it sat on the buildings-at-risk register, roofless and close to being lost for good. In today's episode, Molly sits down with founder Euan Ramsay, who left a London hospitality career to come home and bring the derelict family steading back to life. Rebuilt by Highland craftsmen in stone, lime and slate, it reopened in 2021 as a comfortable boutique hotel - one with a private airstrip, so guests can quite literally fly in.     Glen Dye / From historic estate to wild luxury

    In Royal Deeside, where the River Dye runs down off the moor beneath the granite tor of Clachnaben, sits Glen Dye - a vast Aberdeenshire estate that has been in the Gladstone family since the 1840s. When Charlie and Caroline Gladstone took it on in 1990, swapping London careers in music and design for the glen, the houses had no heating, the place was deep in debt, and the whole estate was, by Charlie's own account, on its knees.     The Star, Alfriston / From medieval pilgrims to a family homecoming, an inn six centuries in the making

    In the medieval village of Alfriston, tucked into the folds of the South Downs, The Star is one of the oldest buildings on a very old street. It began life in 1345 as a hostel run by the monks of Battle Abbey, built to shelter friars and pilgrims walking to the shrine of St Richard at Chichester. It became an inn proper in the 16th century, and somewhere along the way acquired the carved red lion that still stands guard on its frontage, said to be salvaged from a wrecked Dutch warship and carried into the village by smugglers (Alfriston has never been short of those). In today's episode, Molly sits down with Alex Polizzi to hear how she and her mother Olga brought this 15th-century landmark back to life. It's a restoration story with an unlikely twist of fate at its centre: The Star was once part of the Forte hotel empire built by Alex's grandfather, Lord Forte, which makes the whole project something close to a family homecoming.
