Beyond Butter Chicken

Ankita Vaidya

South Asian food is not one cuisine — it's hundreds, and sadly most of them never make it past the butter chicken and naan on your local menu. Each episode, we chase what's missing: the tea gardens of Assam, the Mughal kitchens that shaped an empire's palate, recipes that crossed oceans and came back changed. We talk to chefs, historians, and home cooks still living these traditions, tracing how one spice or family recipe can carry centuries on a plate. Come hungry & you'll leave with a longer list of dishes to chase, and a better sense of why they matter.
