The Dark Arts of Affinage

There are many ways to age a cheese so how best to refine its flavours over time? Welcome to the art of affinage - a French term that translates as "refining" a cheese - and a practice that is starting to take off in the UK. Sheila Dillon attends a competition to find the Affineur of the Year and discovers that the way you age a cheese can dramatically change its taste and texture. A cheddar can become more like a comté by changing the temperature, humidity and length of the ripening process. She hears from practitioners who regularly wash and turn their cheeses. Some have buried cheeses in coal holes, encased them in clay pots or even played them music to find new ways of making traditional cheeses taste differently. Experimentation with these techniques has led to new cheeses entering the market. In this programme the dark arts of affinage will be revealed. Eating Octopus

Since January 2025, thousands of tonnes of common octopus, usually found in the Mediterranean, have been landed by fisherman off the south coast of England. But it’s still not a regular feature on UK menus. In this episode of the Food Programme, Jaega Wise heads to Brixham fish market to find out more about what’s happening, and visits seafood restaurants taking alternative approaches to the challenge. Rockfish owner and chef Mitch Tonks talks her through the difficulties of cooking octopus, and marine ecologist Bryce Stewart at Plymouth University explains why the creature could be here to stay. Jaega also explores what puts people off eating octopus - from tentacles to extreme intelligence. And we head to Guernsey to meet a fisherman whose business has been severely impacted, and try some “Octodog”. Produced by Tory Pope.

How Pistachios Took Over

They’re in your chocolate, your gelato, even your coffee - pistachios seem to be everywhere at the moment - bolstered by the craze for Dubai Chocolate. In this episode Leyla Kazim asks what happens when the world seems to fall in love with one ingredient. She explores how the United States came to overtake traditional producers in the Middle East to become the world's largest pistachio grower, and hears about the nut's long history in countries such as Iran from Iranian-American food writer Anna Ansari. Meanwhile, Honey & Co.'s Sarit Packer and Itamar Srulovich demonstrate how versatile pistachios can be, creating both sweet and savoury dishes. Nick Moss, nuts market reporter at Expana, explains what's happening to pistachio prices and why forecasts for this year's harvest are lower than usual. Leyla also visits Green Lanes in Haringey, home to many Turkish and Middle Eastern businesses, to discover how pistachios have long been central to traditional desserts - and hears how rising prices are changing that. Finally, she meets Charlie Tebbutt, whose south London company Food & Forest imports nuts, including pistachios, from farms that are either avoiding irrigation or using agroforestry methods, as an alternative to the vast monocrops that supply most of the world's pistachios. Howzat? The Story of the Cricket Tea

Chef and broadcaster Romy Gill heads to the pavilion to explore cricket's relationship with food. She discovers that the supposedly British institution of the cricket tea was in fact a tradition imported from Australia in the 1880s. She visits Lord's - the Home of Cricket - and is given access to the kitchens to watch tea being prepared as well as receiving a tour of the Lord's museum to look through their culinary archives. She's made to feel welcome by the BBC Test Match Special team and reminisces over her own childhood cricket teas growing up in West Bengal in India. Romy explores the health of the cricket tea at a club level and heads to Stainland Cricket Club near Halifax in West Yorkshire to meet the inspirational Trish Wood who has helped bring cricket teas back to her club and John Fuller of Cricket Yorkshire who devised a competition to find the best cricket tea in the county. Robin Markwell reports from Stoke Gifford in South Gloucestershire on a decision by cricket clubs around Bristol who voted to no longer make cricket teas compulsory in their league after the pandemic. Why did obesity become a global problem? Professor of Diet and Population Health Susan Jebb explores a heavy history, our changing relationship with food and reasons for optimism. She believes we live in an 'ultra-processed food system' which drives more of the world's population towards health harming diets and a lifetime of being overweight or obese. But she also believes change is possible, and the conditions are right for a food systems change. Also featuring Hannah Ritchie of Our World in Data, Henry Dimbleby, author of the 2020 National Food Strategy, and Alicia Weston of Bags of Taste, a programme of change for people with few cooking skills on low incomes. History
At 25, Hannah’s life begins falling apart. An anonymous intruder has made her phone her enemy. Aided by the technology we all rely on, this intruder is watching Hannah, threatening her, even pretending to be her. Feeling increasingly unsafe, Hannah goes to the police, but they can’t stop it. Worse, they don’t even recognise it for what it is: stalking. Hannah doesn’t know for sure who is behind it all, but she suspects an older man she met more than two years earlier at London Fashion Week. Initially, he claimed to have been hacked. Even today, he disputes stalking her. To make sense of what’s happening Hannah turns to a woman she’s known since she was seven years-old, and who also happens to be an investigative journalist. Together with her “ex-step mum” Carole Cadwalladr, they set out to piece together something the police couldn’t: the true identity of Hannah’s stalker. Doing so means untangling a web of deception spanning continents. On her suspected stalker’s trail, Hannah realises nothing about them is as she first thought.

Jamie Bartlett, host of the hit podcast The Missing Crypto queen, is back with another gripping, investigative serial. In his new series, Jamie tells the story of Megan Bhari, an inspirational 16 year old girl who in 2012 launches a charity to grant wishes to seriously ill children. The charity is called Believe in Magic and it attracts the support of the biggest boy band in the world: One Direction. Believe in Magic soon becomes a household name in the child cancer community, putting on parties, sending thoughtful gifts and organizing trips to Disney. Megan is adored by all those she helps and is given an award by the then Prime Minister David Cameron. What’s even more remarkable is that Megan is herself extremely unwell. She announces that she has been diagnosed with a brain tumour. She raises money online for life saving treatment in the United States. But a group of internet sleuths start to suspect that Meg isn’t ill at all. When they discover Megan is in a Disney resort rather than a US hospital, they decide to hire a private detective to prove Megan is faking her illness–and expose the truth to the world. But events take an unexpected turn. And the internet sleuths-who are all parents of seriously ill children themselves-begin to wonder if they've got it all wrong. "It wasn't meant to end like this," says one. Author Jamie Bartlett and producer Ruth Mayer investigate the truth about Megan Bhari, tracing back over the sleuths’ incredible discoveries, meeting Megan’s old friends and supporters, and exploring the medical profession’s most mysterious condition.
