I recently participated in an interesting beef nutrient-density study. It turns out that the beef from my farm was significantly higher in phytonutrients and vitamin B3. It also had a fantastic omega-6 fatty acid to omega-3 fatty acid ratio. Not only that, but the beef I sent was low in glycation end-products and homocysteine, which are both harmful to the brain. Grass-fed beef also did much better than grain-fed beef when looking at these same factors. My beef may have done best because I raise my cattle on pastures with a diversity of weeds for the cows to consume. Overall, it’s crucial to consume grass-fed, grass-finished beef or 100% grass-fed beef to support your brain and your overall health. Today I want to cover what you really need to know about vitamin D. The RDA for vitamin D is 600 IU for adults under 70 years old. But, the studies that support this amount are outdated. Vitamin D reaches the cells through vitamin D receptors. Unfortunately, you can’t use blood tests to determine what’s happening in the cells, and various problems can occur with these receptors. For example, about 30% of the population has a genetic problem with the vitamin D receptor, meaning they have a difficult time getting the vitamin D they need. Many health conditions are directly related to a problem with the vitamin D receptor, including: • Autoimmune diseases • Breast cancer and colon cancer • Certain cardiovascular diseases • Certain cognitive diseases • Diabetes (type 1 and type 2) • Metabolic syndrome • High blood pressure • Tuberculosis and certain infections • Lyme disease • Hair loss • Crohn’s disease • Respiratory infections • Asthma and food allergies • Low back pain • Vitiligo • Osteoporosis • COPD • PTSD How to increase vitamin D: 1. Take resveratrol, curcumin, quercetin, and sulforaphane 9. Consume butyrate (vegetables) When using high doses of vitamin D, always check with your doctor. High doses of vitamin D can increase blood/urine calcium levels resulting in calcium deposits in the kidney. Also drink 2.5 liters of fluids per day, take cofactors with vitamin D (magnesium, K2 and zinc) and have your doctor monitor your PTH, vitamin D blood levels and creatinine and avoid excess calcium supplements of high calcium foods when taking vitamin D levels over 10,000 IUs.
