Add 3 cups of nut of your choice and toss to coat. Almond, walnuts or pecans work well. If you prefer vegan, you can toss nuts in 2 Tbs of olive or avocado oil instead of egg white. Choose any of the following spice combos: 1. Sugar spice: 1/8 cup sugar, 1/2 tsp cayenne pepper, 1/2 tsp garlic powder, 1/2 tsp salt, 1/2 tsp chili powder. 2. Curry: 1/8 cup sugar, 1/2 tsp salt, 1 tsp ground ginger, 1 tsp curry, 1/2 tsp cayenne pepper. 3. Rosemary: 1 tsp salt, 2 tsp crushed dried rosemary, 1/2 tsp cayenne, 1/2 tsp ground sage, 1 tsp sweet paprika 4. Sweet spice: 1/4 cup sugar, 1/2 tsp salt, 1 tsp pumpkin pie spice, 1/4 tsp cayenne, 1/4 tsp Worcestershire sauce 5. Southern spice: 1/8 cup sugar, 1 1/2 tsp ground cumin, 1/4 tsp cayenne, 1 tsp salt. Or use any combination of herbs and spices you like. Adapt proportions and ingredients to your taste and dietary restrictions. Pour dry spice ingredients over egg white/nut combo. Toss well. Spread on sheet pan. Bake 250 degrees for 1 to 1 1/4 hours, stirring every 15 min. Cool and store in air tight container. Patti's oatmeal cookie recipe: Preheat oven 450 F, Mix in medium bowl; 4 Tablespoons plain greek yogurt, 3 eggs, 1/4 cup brown sugar, 1 1/2 tablespoons room temp butter, 1/8 cup veg. oil, 1/8 teaspoon vanilla extract, 3 pinches of coarse salt, 1 1/2 cups whole oats, 1/2 cup oat flour, 1 1/2 teaspoons baking powder, 1 cup mini chocolate chips. Refrigerate for at least 15 minutes before baking. Bake for 12-15 mins.
