FOOD: Corrie: Corrie’s Smoked Salmon and Asparagus Pasta Ingredients 1 cup self raising flour 1/2 cup caster sugar 1 cup coconut 100 g butter melted 3 tbs passionfruit pulp 1 X 395g tin condensed milk 3 tbs lemon juice Instructions Preheat oven to 180 degrees (160 fan forced). Grease and line a rectangular slice pan with baking paper (16X26cm). Sift the flour into a large bowl. 4. Add the coconut, caster sugar and melted butter. 5. Mix together until it forms a dough (you might find it easier to use your hands!). 6. Press the mixture firmly into the prepared tin and smooth the top with the back of a spoon. 7. Bake in the oven for 10-12 minutes or until lightly golden. 8. Set aside to cool slightly. 9. Reduce the oven temperature slightly (to 160 degrees). 10. Whisk the condensed milk, lemon juice and passionfruit pulp together in a bowl. 11. Pour the mixture over the top of the cooled slice base. 12. Place back into oven for 15 minutes (or until the passionfruit layer has set when lightly touched). 13. Leave in the pan to cool completely. 14. Cut into slices.
