Talking wine with Laurent Ponsot of Domaine Ponsot in Burgundy “I learned from old people in my village when I was a kid. Lot of things on birds, trees, grass, flowers… things like that. And the relation of all these elements with the vines, with the grapes, with the weather and so when I decide my date of grapepicking. It is just based on when is this flower blooming, where does this typical bird makes its nest – in the tree, up, in the middle down? When is this grass growing. Then we find a date.”
