Ultra-Processed: The NOVA Test for What's Actually in Your Pantry

Share your thoughts You've heard the phrase "ultra-processed foods" everywhere. The 2025 Lancet Series called them a global health threat. The wellness world treats UPF as the new villain. But most people still can't tell you what counts as ultra-processed and what doesn't — because the definition is genuinely fuzzy, and the term is doing a lot of work in one breath. In this fireside chat, Ashok and Meera Vasudevan hand listeners the literacy tool the conversation is missing: the NOVA classification system. Four simple groups, from whole foods to industrial formulations, that turn a confusing buzzword into a practical pantry test. Ten seconds with any food label, and you'll know roughly where it sits. The episode also draws a line most wellness conversations don't: processing is not a slur. Fermenting, soaking, sprouting, milling — these are processing too. Idli batter is processed. So is sourdough, miso, and yoghurt. The villain isn't human food preparation. The villain is industrial ultra-processing — formulations engineered for hyper-palatability, packed with additives, designed for a long shelf life and a short attention span. Honest about the scientific debate (the NOVA framework has genuine critics), generous about the gems (most traditional cuisines are NOVA Group 1–3 by design), and ruthlessly practical about the action: read the back of the box. Five minutes. Evidence-based. A literacy tool you can use this week. 🎧 New episodes every Tuesday at 5am. 🌱 Pay the Farmer, Not the Pharmacy is a CSAW production.  Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Inflammation: The Word Everyone Uses, Almost No One Defines

Share your thoughts "Inflammation" is the word of the wellness decade. It's on supplement bottles, in podcast titles, and on the back of every functional drink. But ask ten people what it actually means, and you'll get ten different answers — most of them muddled with weight, fatigue, or vague dread. In this fireside chat, Ashok and Meera Vasudevan clear the fog. The episode draws three lines most wellness conversations refuse to draw: the difference between acute inflammation (the body healing) and chronic inflammation (the body smouldering), the fact that inflammation is not the same as obesity (slim people can be chronically inflamed; people in larger bodies can be metabolically calm), and the most under-told truth in the conversation — what inflames you is not what inflames me. Drawing on 2025 systematic reviews and umbrella analyses, this episode names the villains (refined sugar, ultra-processed foods, industrial trans fats, excess alcohol), celebrates the angels (berries, leafy greens, fatty fish, walnuts, olive oil, turmeric, fermented foods), and then delivers the wisdom most podcasts won't: the lists are a starting point, not gospel. Dairy, wheat, and nightshades are the classic it depends foods. Your body is the real lab. N=1. You are your own study population. Five minutes. Evidence-based. A little cheeky. Zero panic. 🎧 New episodes every Tuesday at 5am. 🌱 Pay the Farmer, Not the Pharmacy is a CSAW production. 📩  Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Seed Oils:The Villain Story That's Half True

Share your thoughts The internet has decided seed oils are a public enemy. But is the panic warranted — or have the scholars dropped the scholarship in the bully pulpit? In this fireside chat, Ashok and Meera Vasudevan take the criticism seriously and take it apart. Yes, industrial extraction is ugly. Yes, reusing frying oil is a real problem. Yes, the modern omega-6 to omega-3 ratio has gone wildly off course. But that's not a seed problem — it's a processing problem. And lumping olive, sesame, mustard, and coconut oil into the same villain bucket as refined industrial soybean oil isn't just unfair. It's bad nutrition advice. Drawing on the latest peer-reviewed evidence — including 2025 systematic reviews and a Johns Hopkins study showing higher linoleic acid levels are linked to a lower risk of type 2 diabetes — this episode separates the grain from the chaff. And the seed from the oil. Eat Like Your Gut Is Listening

Share your thoughts Eat Like Your Gut Is Listening Over the last three episodes, we have made the case that the gut is the organ running the show. That your mood, your skin, your lungs, and your brain are all in conversation with your microbiome, every single day. That dysbiosis -- an imbalanced, low-diversity gut ecosystem -- is the common thread behind conditions that send people to four different specialists. This is the episode where it all becomes practical. Episode 4 is the Kitchen Reset -- the series finale where Ashok and Meera pull everything together into a simple, affordable, real-food framework that anyone can start this week. The centrepiece is the 30-plants-a-week principle -- the most important and most misunderstood idea in gut health nutrition. Not 30 servings. 30 different plants. And the good news: herbs count, spices count, that tin of chickpeas at the back of the cupboard counts. Variety is the medicine. They also lay out a simple weekly eating framework -- not a diet plan, not a detox, not a supplement protocol. Just a way of thinking about your week that makes microbiome diversity the default rather than the exception. The gut is listening to every meal you eat. This episode is about making sure you have something worth saying.   #PayTheFarmer #GutHealth #KitchenReset #30Plants #Microbiome #NutritionScience #KitchenPharmacy #EatLikeYourGutIsListening Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! The Rash, The Wheeze, and The Gut Nobody Checked

Share your thoughts The Rash, The Wheeze, and The Gut Nobody Checked The eczema cream that works for a while and then stops. The inhaler that manages the wheeze but never quite resolves it. The acne that comes back every time you think you've cracked it. These are familiar stories. And they share something that rarely comes up in the dermatology or respiratory clinic: a gut that nobody thought to check. In Episode 3 of our Gut Health series, Ashok and Meera make the case for the gut-skin axis and the gut-lung axis — two of the most compelling and least-discussed connections in modern health research. The same dysbiosis we unpacked in Episodes 1 and 2? It doesn't stay in the gut and it doesn't stay in the brain. It travels. And for many people, it surfaces on their skin, or in their airways. The science here is striking. Studies now show causal links between specific gut bacterial profiles and eczema, psoriasis, acne, and rosacea. Research on the gut-lung axis connects gut microbial diversity directly to asthma risk and COPD severity. And the practical answer — as always on this podcast — lives in your kitchen. This week's focus is fermented foods: the most direct, most delicious, and most culturally familiar way to restore the microbial diversity that keeps your skin calm and your airways clear. Yoghurt, kefir, kimchi, miso, lassi — the foods your grandmother made without calling them functional.     #PayTheFarmer #GutSkinAxis #GutLungAxis #Eczema #Asthma #FermentedFoods #Microbiome #KitchenPharmacy #PayTheFarmerNotThePharmacy Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"! Your Mood Is a Menu Problem

Share your thoughts Your Mood Is a Menu Problem You wake up feeling flat. Or anxious. Or foggy in a way that no amount of sleep seems to fix. And the conventional answer — the one most of us eventually reach for — is a pill that adjusts the chemistry in your brain. Which may well be the right answer for some. But here is the question very few doctors have the answer to: what influences the brain chemistry? The answer, increasingly, is the gut. Around 90 to 95 percent of the body's serotonin — the neurotransmitter most associated with mood, and emotional stability — is produced not in the brain, but in the gut wall. By your gut bacteria. From the food you eat. In Episode 2 of our Gut Health series, Ashok and Meera go deep on the gut-brain axis — the two-way communication highway between your microbiome and your mind. They unpack the vagus nerve, the role of short-chain fatty acids in brain health, and what the latest research tells us about the connection between gut dysbiosis and depression, anxiety, and cognitive decline. And then — practically — they break down fibre. Not as a vague health concept, but as the single most powerful dietary tool for feeding the bacteria that make your brain chemistry work. Soluble fibre, insoluble fibre, resistant starch — what each one does, where to find it, and how much you actually need. Your mood is not just a brain problem. It is, in significant part, a menu problem. And that is good news — because your menu is something you can change.   Thanks for tuning in to "Pay the Farmer, Not the Pharmacy"!
