The craft beer scene in Australia is growing at a rapid pace each year, with a new brewery opening up on average every 6 days. A few mates from Sydney have decided to have a crack at it, but found it hard to find information out there about opening a new brewery in Australia. They're recording all their conversations with brewery owners and professionals, sharing their learnings via a podcast to other aspiring brewery owners.

    Gypsy Brewing Part 1 - Adam Betts (Edge Brewing Project) & Tony Dichiera (The Suburban Brew)

    To kick off our first interview episode of Series 2, we dive deep into the Gypsy Brewing model. Now, It was hot topic in series 1 and has since been a very debated one within the BMAB community. So this is part 1 of the Gypsy brewing segment, where I catch up with prominent Gypsy Brewers Adam Betts from The Edge Brewing Project in Victoria and Tony Dichiera from The Suburban Brew in South Australia. Now, both guests have been gypsy brewing for many years now, and both have different approaches and motivations of wishing to pursue the model when starting out their beer making business.  In the episode we talk about their successes to date with gypsy brewing, their challenges, and their end goals with it all. We talk about what Gypsy brewing is and what it isn’t, some of the business operational considerations of it in regard to sourcing and developing a good relationship with the right brewery, as well as the key marketing and sales aspects a gypsy brewer must have up to scratch if they are going to make any dent in pursing the path as a brewer without a brewery.     Gypsy Brewing Part 2 - Brad Walker from Sunday Road Brewing Co.

    Continuing on with Part 2 of our Gypsy Brewing segment, I chat with Founder & Owner Brad Walker of the Sutherland Shire based brewery, Sunday Road. Brad along with a number of other successful breweries, started out as a gypsy brewer before launching into his very own physical brewery. Beginning his journey in 2016, bouncing around a couple different breweries such as Wayward in Sydney’s Inner West and Illawarra Brewing Co down Wollongong way, Brad learnt his craft and built the Sunday Road brand via the gypsy brewing path for several years. In this episode, Brad shares his personal views and opinions of what gypsy brewing is, and what it isn’t, the differences between gypsy brewing today compared to when he and many other breweries started out down this same path, and he talks about his tough slog story of his gypsy brewing days, his learning and personal development about professional brewing, the business side of the brewing industry, plus all the challenges, mistakes, as well as successes leading up to the eventual opening up of his very own physical brewery.     Today’s episode we discuss Brewery Layouts & Designs. To provide some expert advice on this topic I’m joined by our resident brewer & brewery consultant Neil Playfoot, where we chat with John Gonzales from Bespoke Brewing Solutions and his new addition to the team, Justin Fox. In our conversation we cover what an aspiring brewery owner needs to know from a foundational perspective, including knowing what your budget is, the size of your overall brewery space, monthly & annual production goals, and whether you intend to be more taproom or wholesale sales driven etc. We then move into a bit of a client consultation, where Bespoke guides myself and you the audience through the process of planning the layout of your equipment within your space and all the important and often overlooked considerations for fitting out your brewery.     Brewing Equipment Quotes | Installation & Commissioning with Konig Brewing Systems

    Today’s episode I chat with Canadian based Brewing Equipment Manufacturer and consultancy business Konig Brewing Systems.  Founders Brad McQuhae & Balbir Sidhu invite along other members of their team, Sales Executive Paul Feaver & Technical Sales &  Service operative Matthew AKA Mugg Cameron. In our chat we cover a lot of ground, discussing topics such as comparing and breaking down sales quotes from manufacturers & suppliers and providing some good investigations into why quotes can vary in price and inclusions. We also discuss the Installation & Commissioning side of equipment, complimenting the article that Brad did for the BMAB site a few months back. This includes Factory Acceptance Testing and considerations when trying to do the install yourself.     Today’s episode we begin our Wild Ales & Fermentations segment where we chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market. In part 1, I had the pleasure of speaking with Marrickville based Brewery Owner of Wildflower Topher Boehm to discuss their unique brewing & beer offerings in relation to wild yeast and barrel aged blending. I was very much excited to have Topher on the podcast to discuss how he uses wild yeast that he has collected and cultivated over the years from the regional bushlands of NSW to express one-of-a-kind beers that not even the hardcore beer punters have experienced before.  His childhood always evolved around making good food from scratch and learning to have a craft that can be perfected over time that should never be clouded or hurried by money or popularity and this reflects in his business philosophies with Wildflower.  He is a big believer in starting small and scaling up organically within your means as he shares with the audience some very interesting business advice for those looking at starting a brewery, especially in regard to the unique business model they have established.     Wild Ales & Fermentations Part 2 - Alex & Yvonne Jarman from Slow Lane Brewing

    We continue with our Wild Ales & Fermentations segment, where I chat with brewery owners that are pushing the envelope in regarding to the unique types of beers they are producing and offering to the craft beer market. In part 2, I chat with Husband-and-Wife duo Alex & Yvonne Jarman from Botany based brewery, Slow Lane Brewing. Despite the name, Slow Lane, are quickly building a reputation within the brewing community especially here in Sydney on brewing and putting together some quality complex beers in the form of traditional European style beers.  Having a barrel aged program, open fermentation practices and trying to brew true to the style by focusing on the fermentation side of their beers, the typical turnaround for beer in the tank to a customer’s glass is much longer than other modern-day lager & pale ale breweries, which is where Slow Lane derives its name from. Being open not much longer than 12mths, and battling with ongoing lockdowns and COVID restrictions, Alex and Yvonne have expertly navigated their new brewery business to some early day’s success, which much more to come I imagine. It’s a great chat with both of them, who explain their journey of opening up, their passions when it comes to brewing particular styles, and breath inspiration to other aspiring brewery owners who may be looking at offering a unique point of difference as well. J Farber of University of Sciences in Philadelphia to discuss all things Spontaneous Fermentations in relation to Sour Beers. We cover some interesting ground including the sour beer boom both in the US, Australia and other countries, the different types of sour beers in the market, the unique back story of the Lallemand Philly sour yeast that was isolated in Dr Matthew J Farbers lab in Philadelphia, the different bacteria’s that contribute to sour beers, as well as the various approaches professional brewers are taking towards brewing sour beers in modern times.
