In today’s episode #72 of The Nourishment Mindset podcast, we welcome listener, gardener, renovator, health enthusiast and working Mom/wife extraordinaire, Meghan Robidoux. Meghan graciously shares her health philosophy and story of healing from Lyme disease. And offers some great tips for balancing a full life: she intentionally frames her day around “the one big thing” and no longer uses the word busy to reflect her intention. For Meghan it’s all about repetition of select rituals — for example, dedicated family breakfasts, 5 minute piano practices, and the importance of her first and last thoughts of the day. I first met Meghan nearly 20 years ago. We had just moved to the Pacific Northwest for Patrick’s finance job, where he worked with Meghan and her now husband, Jayson. My first impression was, this woman radiates great, calm, content energy — hers is a magnetic vibe and I want to know her.Over the years we’ve all changed jobs, moved multiple times, started families and enjoyed RV adventures. I’ve watched the Robidoux buy, remodel and sell some great homes. And when I say remodel, picture Meghan with some serious demo equipment in hand. This woman does it all! AND their kids are a delight to be around: Meghan and Jayson are raising them with strong values, sound faith, great nutrition and lots of love and outdoor adventure. You can take ‘em anywhere, and we did recently while sharing time in France: from waterpark to winery; restaurant to antique theater; and Med boat trip to a rough return home to a power outage, there were a total of zero issues. That’s a big deal with one family, let alone when two families are sharing but one toilette française!I had the idea to invite Meghan on the show after the most recent avocado oil scandale surfaced because she has a legit, easy and delicious homemade mayo recipe. (Well, to be honest I had the idea to ask for her recipe and Patrick suggested I interview her.) For the record, recently UC Davis authenticity tested 54 avocado oil “only” containing products and found that 48 failed. That’s 88% (not the 93% I incorrectly stated during the show, oops)! And includes the mayo brands I’ve been touting, buying and serving. Yet another story of Big Food substituting cheaper ingredients — in this case inflammatory seed oils, and lying on the label. Disgusting and maddening, yet not at all surprising. Chez Huey is therefore going back to homemade. And you can, too, starting with Meg’s fine One Minute Mayo recipe below. But first, here she is with her radiant, fabulous family: FINE RECIPE- Meg’s One Minute Homemade Avocado Oil MayoIngredients1 cup avocado oil1 large egg1 tb mustard1 tb white vinegar1 tsp saltfreshly ground pepper to tasteStepsYou’ll need a pint sized (or slightly larger) wide-mouth Mason jar and an immersion blender. Ensure the blender fits comfortably through the opening and leave a little room at the top for blending.Add all ingredients into the Mason jar.Place the immersion blender all the way to the bottom of the jar. Blend keeping the blender near the bottom at first. As the mixture turns thick and creamy, slowly move the blender upward to incorporate the remaining oil.Cap the jar and refrigerate. Use the mayo within two weeks.In Meghan’s words: “One jar. No mess. As a reminder, butter is a wonderful source of critical fat soluble vitamins A, D, E and K, as well as arachidonic acid, which is important for cognitive function, mood regulation, energy balance, muscle growth, wound healing and immune function.
