Running on Carbs Podcast is hosted by Coach Val, a wife, empty-nester mom and executive level professional who has a love and passion for helping other driven women pursue their own running goals and plant-based way of eating. We talk about everything running related from training for races to mindset to prepping plant-based meals that fit a busy lifestyle. There are no apologies for loving carbs on this podcast! Yeah, protein is important, and we’ll talk about that too, but carbs are our jam. Although, we do [mainly] focus on the healthy kinds. Coach Val is a double certified run coach through UESCA and RRCA. She is also a National Certified Personal Trainer, Fitness nutritionist that specializes in plant-based nutrition and Correctional Exercise Specialist.

Coach Val is a rare find! She truly cares about the individual person and is just as enthusiastic about improving your abilities as you are! She’s full of ideas to create fitness plans for each unique style of running and is a researcher by nature always coming up with new ideas. She’s mindful of the whole person and will meet you where you’re at. Whether you are new to running and looking to ease the learning curve or you know you enjoy it and want to aim for higher goals, Coach Val is an excellent source to help you streamline your efforts.

Coach Val is an inspiration! I appreciate the hard work and diligence that she has put into her training program and everyday life. I listen to this podcast mostly for inspiration- I enjoy swimming, walking, and hiking for mental health and cardio benefits. This podcast has great tips and tricks that can help with any form of exercise. Coach Val demonstrates that hard work can pay off if you stick to good habits. Highly encourage for people of all lifestyles to take a listen- it could change your life!
