    Asahi-Shuzo in Koshiji Town, Niigata—a prestigious sake brewery that marked its "second founding" with the birth of "Kubota" in 1985. For over 40 years, the brewery's founders have carefully cultivated every aspect of sake brewing: the local rice grown in partnership with farmers, refined brewing techniques, and talented craftspeople. Through these efforts, they've preserved the original landscape of this storied "brewers' village." Today, we speak with Yasushi Hosoda, President and CEO of Asahi-Shuzo, about the enduring legacy of "Kubota" and the timeless values passed down through generations of master brewers.

    Vol.5_"Establishing and refining the high-end sake "Kokuryu" Redefining the value of sake"

    Kokuryu Sake Brewery celebrated its 220th anniversary in 2024. While reading the trends of the times, the family precept, which is "make good sake", has been passed down unchanged in this sake brewery. The sixth president, Yoshitaro Mizuno, was one of the first to start brewing ginjo sake, and the seventh, Masato Mizuno, inherited the sixth's passion for high-quality sake brewing and established the high-end sake brand "Kokuryu". Now, Naoto Mizuno, the eighth president, is pushing the brand to even greater level and redefining the value of sake as bridges among local people, industries, and culture.
