    LATD 008 - Bless This Texas Soil with Erin Wetmore and Brittany Harrold

    EPISODE DESCRIPTION:  In this episode, we dive into the topic of gardening and farming with Erin Wetmore and Brittany Harrold. WHAT HAVE YOU BEEN LEARNING? Erin: All about canning!  Brittany: Contentment in this season of life. SNACK: Magy made her favorite coffee cake, but gluten free Coffee Cake recipe: https://preppykitchen.com/coffee-cake/#recipe Magy used King Arthur Measure for Measure Gluten Free flour to make this gluten free. She also skips the vanilla glaze on top. DRINK: Sarah made a cozy October coffee October Coffee recipe: Start by whipping up a couple of cups of whipping cream depending on how many drinks you’re making. In whatever mug or glass you choose, pour 1tsp up to 2T of brandy, depending on how stiff you want your coffee. Dollop a generous heap of  sweetened homemade whipping cream into your glass, pour hot coffee on top from a distance high enough above your glass to mix it. Sprinkle a little salt on the floating whipped cream and a sprinkle of turbinado sugar.     LATD 007 - Homeschool those teens Preparing for adult friendships with Heather Neufeld Part 2

    In this episode, we’re joined by Heather Neufeld for a thoughtful conversation about homeschooling teens and the important transition from childhood to adulthood. Heather shares practical wisdom for preparing preteens for the high school years, helping teenagers grow in maturity and responsibility, and intentionally equipping them for the early years of adult life. WHAT HAVE YOU BEEN LEARNING? Magy shares her trials of the week & how we are faced with the opportunity to waste the lesson or grow from it. Sarah talks about the parable of the talents and how Gid wants to give our everything everywhere all the time for Him. Heather gives a glimpse of the things she’s putting her hands to do in this new season of life; particularly learning about the life of Laura Ingalls Wilder. We commend to you the entire biography series from Canon Plus “the Heroes  of History” by Janet and Geoff Benge, Laura’s story is so rich! SNACK: Carrot Cake Whoopie Pies 3 cups flour 1 tsp cinnamon 2 cups sugar 2 tsp baking soda ½ tsp salt 4 eggs 1¼ cups oil 1 tsp vanilla 3 cups finely diced carrots (use the food processor, it makes it so easy, especially if you have a mini processor!) Mix like you would any other muffin or cake recipe add ing all dry ingredients to wet. The batter will be thick; let it sit for about 10 minutes. Lay out two parchment lined pans. Place your batter in batches into piping bags, cut the tip very large,  then pipe the batter in disks onto the parchment. Make the disks as small or large as you wish. You can alternatively just spoon the batter onto the parchment, but you have to make sure to smooth the batter down into a disk instead of a mounded so that the cakes aren’t too thick in the center. Bake in a 350 oven for about 7-12 min depending on your oven. They should not be over-baked and should just spring back when lightly touched in the center. Let cool completely, even leaving them in the fridge while you make up the filling. Pipe this filling onto a cake disk: 8 oz cream cheese, softened but still cool½ cup (1 stick) unsalted butter, softened4 cups powdered sugar1 tsp vanilla¼ tsp salt1–2 Tbsp heavy cream or milk, only if needed DRINK:  Magy combines a ½ gallon of unsweetened black tea & ½ gallon of peach  juice to make this refreshing summer beverage! Serve over lots of ice!     LATD 004 Big Hospitality - Amy Enns and Julie Bamberger Part 1

    In this episode, we chat with Amy Enns and Julie Bamberger about what hospitality really is and its importance in the Christian life.  “WHAT HAVE YOU BEEN LEARNING?” SEGMENT: Sarah: Being grateful for gravity after finishing up the Canon+ conference series “Keeping Calvinism Sassy” Magy: Looking ahead at being a good grandma, mother-in-law, and mother to adult children after listening to Come Over For Dinner with guest Kirsten Miller Julie: All about the ins and outs of opening her lending library, Five Sparrows Living Books. Amy: Looking ahead at learning to join granny squares for our crochet project, as well as pursuing a more focused attention on prayer.  SNACK & DRINK  Sarah made thumbprint cookies and Magy made some peach lemonade.  Thumbprint Cookie Recipe: (Yield: 36) INGREDIENTS: 1 jar of your favorite strawberry jam (I LOOOVE the HEB organic strawberry spread; see link below.) 2 cups softened, almost melted butter  1 cup sugar 2T molasses 1 egg yolk 157g starter (or sour cream) 570g flour 8g salt Sugar for rolling •Mix the first 5 ingredients till thoroughly combined. •Add flour and salt to bowl, mix till combined. •Portion 36 cookies with a scoop. •Roll into balls. •Roll in sugar. •Flatten to 3/4” with the back of a measuring cup. •Depress the center with your thumb or 1tsp measuring spoon to make a well for the jam. •Freeze as-is in on a parchment. When fully frozen, preheat your oven, place frozen cookies on parchment lines pans. •Right before going into the oven, spoon jam into the thumbprints. Do not over fill or the jam will bubble over the cookie. Bake at 400 for 10 min, then rotate pans & bake 8ish minutes more. Your thumbprints are finished baking when they are a deep golden brown and the jam is bubbling. Let them set a while before moving them to a cooling rack; the jam will be like lava for quite some time. https://www.heb.com/product-detail/8931002 Peach Lemonade Recipe: Simply mix up a regular batch of lemonade. Purée a couple of ripe peaches and add that to the lemonade and mix. Adjust the level of lemon juice and sugar after you’ve added the peach purée to your taste.

Magy is currently listening to The Pleasant Home by Nancy Wilson, and loving her insight into Proverbs 16:21  “ sweetness of the lips increases learning…” SNACK & DRINK  ICED COFFEE RECIPE (Serves 1-2 people depending on your glass size) In a tall glass, froth ¼c milk & ¼c cream.Fill your glass ⅔ full with ice; set aside.In a shaker or quart jar, vigorously shake: 2 shots espresso or a strong brewed coffee, a few cubes of ice to chill the liquid, maple syrup to taste, & 1tsp vanilla extract the pour over ice & milk in your cup..Sprinkle the foam with a little turbinado sugar & one shake of salt. Enjoy!
