Having done one myself, I can tell you it's very difficult to do a good podcast as a solo.
Terry Frost does two: this one, and the Martian Drive-In Podcast (where he focuses on science fiction & related genre cinema).
He keeps a nice tight format, always opening, with his greetings, a brief update on what he's been doing/watching lately, and then moving into the two movies he's reviewing/commenting upon for that episode.
He only uses two criteria for the movies he chooses for this particular podcast: 1) it has to be something he likes and 2) it has to be more than 20 years old (Paleo as in pre-historic, get it?)
I usually agree with his assessment, but even when I don't, I find his insights and comments interesting and educational. And usually brings at least a smile, perhaps a chuckle, and often and outright guffaw to my face.
I have also discovered some hidden gems, in the movies he tackles. And/or occasionally inspires me to revisit movies I previously have watched and either loved, forgotten or hated (Rarely).
It's an entertaining good time, and one of my go-to's in my podcast consumption.
