This is great information for the Maple Syrup enthusiast. We are in our second year of forming the TruNorth Maple company and it’s great listening to the content to 1)confirm what we are doing and 2) learn something new. Richard and Rachel are great. Process . Do you sterilize jars and lids before canning your syrup and then put finished bottles in your canner to seal . Also if finished syrup is put bottles with plastic caps do you turn them on their sides the heat seal the caps. I find your podcasts very informative

(Ie, it’s not just about the mechanics of syrup making; the podcast brings the subject to life with his very able co-host and sidekick!)

Richard brought up the idea of using membrane separation to concentrate sap instead of boiling it. It’s a great all-electric method to cut on time, waste, heat and emissions resulted from vaporizing large volumes. Thanks for sharing!
