Born in France to Laotian refugee parents and raised in the jungles of French Guiana, Marc’s early life was far from traditional—but it’s where his passion for baking began. Though he was steered toward medicine, a turning point brought him to Minnesota, where he rediscovered his dream. Trained at the prestigious École Lenôtre in Paris, Marc honed his craft before returning to Saint Paul to open Marc Heu Pâtisserie Paris.     Today’s guest, Aubry Walch, is the co-founder of The Herbivorous Butcher—the nation’s first vegan butcher shop. What began as a laugh-out-loud idea at the dinner table quickly turned into a groundbreaking venture. In 2014, Aubry and her brother Kale introduced their meat-free creations at the Minneapolis Farmers Market, building a devoted following with just five products. By 2016, they opened their brick-and-mortar shop, redefining what a “butcher” could be. Today, Aubry continues to innovate, crafting bold, plant-based alternatives that challenge expectations and prove that good food can be both compassionate and delicious. Since joining the Society in 1994, Mollie has played a vital role in preserving and managing its extensive collection. She holds a B.S. in history from Ball State University and an M.A. in historical administration from Eastern Illinois University. Her career spans work as a corporate archivist in Illinois and a senior internship at the Henry Ford Museum in Greenfield Village, Michigan. Mollie has also lent her expertise through leadership roles with several regional museum and archives organizations. Between 2 Urns is hosted Youa Vang. Alan brings more than 25 years of aviation design experience—and a decade of diverse creative work—to his role as Senior Airport Architect with the Metropolitan Airports Commission. Guided by a vision to create exceptional airport experiences that help Minnesota thrive, he leads the design and redevelopment of airport facilities with a strong emphasis on sustainability, accessibility, and cross-disciplinary collaboration. Alan has contributed nationally to national programs, including chairing a leading guide on airport terminal restroom design and advancing conversations on accessibility beyond ADA standards. A past president of AIA Minnesota’s Saint Paul chapter, he also serves on MSP Airport’s Arts & Culture Committee, helping integrate public art into airport spaces. Outside of work, Alan restores his historic Saint Paul home and performs in a post-punk band, Mucilage—bringing creativity to everything he does. Between 2 Urns is hosted Youa Vang.
