    Nina Teicholz, PhD, is a science journalist and author of the New York Times bestselling The Big Fat Surprise: Why Butter, Meat, and Cheese Belong in a Healthy Diet, which upended the conventional wisdom on saturated fat and spurred a new conversation about whether these fats can cause heart disease.

    Named a Best Book of the year by the Economist and Wall Street Journal, it continues to be called a "nutritional thriller" for anyone seeking to understand the amazing story of how we came to believe dietary fat is bad for our health.

    Nina is also the founder of the Nutrition Coalition, a non-profit working to ensure that nutrition policy reflects a transparent process and is also evidence-based.

    Carnivorist Chats Episode 58 "Modern Stone Age Living" with Dr. Bill Schindler

    Dr. Bill returns for his second appearance on the podcast.

    Dr. Bill Schindler is an archeologist who has traveled to every corner of the globe to learn about our human roots. During his travels, Dr. Schindler has learned that our current industrialized food system is vastly different from what we have eaten as a species for millions of years. His much-anticipated book, Eat Like A Human, was published in 2021 where his goal is to help his readers find and prepare food that is as nutrient-dense as possible.

    Besides his family, Dr. Bill's other passions are the Eastern Shore Food Lab and Modern Stone Age Kitchen, which are located in Chestertown Maryland. There, he and his wife Christina and their children offer immersive classes on a range of topics, including - cheese making, sourdough bread making, nose-to-tail butchering and cooking, fermenting, and foraging as well as an amazing restaurant experience where you can sample delicious food that is all made from scratch in house.

    It was an honor to welcome Dr. Bill back. We chatted about our meeting up last year at Keto-Con as well as his recent trip to Sardinia and what amazing discoveries he made there. We then dove back into his book and touched on some divisive topics like bugs and their place in our ancestral diet and today world as well as why he chose to include chapters on plants, maize, etc in the book and tips he has for modern Stone Age living.

    Carnivorist Chats Episode 57 "You Can Do Hard Things" with Mimi Morgan

    It was an honor to welcome Mimi Morgan to the podcast to share her incredible journey of hope, healing and resiliency.

    Even though she had asthma from a young age, Mimi was always adventuresome. She hiked, was an equestrian, kayaked, dog sledded and loved the outdoors in general.

    Things began to change when she had a fall and broke her wrist and was later diagnosed with rheumatoid arthritis. Shortly afterward, she began to notice neurological symptoms and ended up with another diagnosis of Parksinson's.

    In Mimi's own words;
    "Life was tough before, but it was about to become brutal"

    One day after walking she had a stroke while sitting on a bench and was admitted to hospital where she ended up contracting an MRSA infection through the IV. Now she was fighting for her life.

    Mimi's recovery from all this is nothing short of miraculous.

    Join us as we discuss how she used the carnivore diet, exercise, cold plunges, sleep enhancements and more to become her best self as she turns 70 years old.

    If you think you can't, guess again, you can, and as Mimi often says "You can do hard things"

    She is a testament to that.

    Carnivorist Chats Episode 56 "Weathering The Health Storms" with Decedra Apgar

    Decedra Apgar has an amazing and inspirational health story to share.

    At the age of 47, her health took a nose-dive. She had struggled with multiple health issues over the years, but in March 2019 it seemed as though her body just couldn’t take anymore and crashed.

    She awoke one morning with large patches of hives all over. Her allergist said not to worry, because the antihistamines and steroids would get it under control. In fact, it made it worse. Her anxiety went through the roof as the hives and severe itching continued. The insomnia, the itching, the extreme hunger, the anxiety… she was a wreck. The extreme anxiety was, in part, fueled by a history of anaphylaxis. She received allergy shots for 6 years when she was in her twenties.

    After she recognized the link between eating and developing hives, Decedra began to limit the kinds of foods she ate in order to limit the reactions, however her body seemed to react no matter what she did. She had become allergic to Benadryl, aspirin, and all other over the counter NSAIDS several years before, and now it seemed like she had become allergic to food in general as well. It was difficult to find something that wouldn’t cause a reaction. It felt like she had become allergic to life.

    Decedra then began searching for information anywhere she could find it. She eventually learned about histamine intolerance, salicylate and chemical sensitivities, and oxalate toxicity.

    An analogy Decedra likes to make as a native Floridian is that oxalates were the hurricane that spun off the tornadoes of histamine intolerance, salicylate and chemical sensitivities.

    She continues to pursue educating herself on ways to address oxalate toxicity and all the related conditions that can arise from it, and hopes that her story will help others along the way so that no one will suffer needlessly from this condition.
