FEEDING THE (R)EVOLUTION

I wish I’d had Jessica Waite’s perspective during my formative years as a chef. My generation came through an era of abundance, convenience, and consumerism. We focused on the plate, often without fully understanding the impact of the systems behind it. Jessica’s work reminds me that great food starts long before it reaches the kitchen—with the farmer, the soil, the ecosystem, and the choices we make as an industry. She has a rare ability to challenge assumptions without preaching and to inspire change without judgment. I sincerely hope the next generation of chefs and consumers alike develope a far deeper connection to food than mine did. If they do, voices like Jessica’s will be a big reason why.
