    Tacos & Burritos Across Borders

Today, we’re traveling to Mexico, not simply to talk about tacos and burritos, but to explore how food crosses borders, evolves through migration, and becomes part of a nation’s identity. My guest is Mauricio Velázquez de León, food writer, publisher, and author of An Illustrated Guide to Tacos and Burritos. Born and raised in Mexico City and now living in the United States for nearly three decades, Mauricio brings a unique perspective on Mexican food, culture, history, and the way cuisines change when they travel. In this episode, we explore why tacos have become one of the world’s most popular foods, the misconceptions people have about Mexican cuisine, and the fascinating evolution of tacos and burritos across borders. We also discuss authenticity, adaptation, regional diversity, migration, and the question of whether food can ever remain exactly the same once it leaves its homeland. Mauricio also shares his personal connection to Mexican culinary history as the great-nephew of Josefina Velázquez de León, the pioneering cookbook author and publisher often called the “Julia Child of Mexico.” From Mexico City to Southern California and beyond, this is a conversation about much more than food. It’s about family, identity, migration, and the stories we carry with us, and sometimes reinvent, when we cross borders. Three continents, Two Cultures, One Plate

In this episode of The Rice Table, we sit down with Francis Kuijk — Dutch chef, culinary author, and one of the most recognizable voices in Indonesian and Indisch cuisine in the Netherlands. Francis first captured national attention as a finalist on the TV-show Heel Holland Bakt in 2016, where her baking skills and storytelling through food made a lasting impression. Since then, she has become a passionate ambassador for Indonesian and Indisch food culture, sharing traditional flavors and techniques through workshops, cooking demonstrations, television appearances, and her writing. She is the author of several acclaimed cookbooks, including Basisboek Indonesisch, Bersama, Manis and Planken met een Indische twist, each reflecting her deep respect for Indonesia’s culinary heritage and its place within Dutch food culture. Born in the Netherlands and raised in Australia, Francis brings a distinctly Dutch-Australian perspective to her work. Her Australian upbringing, combined with her Dutch-Indonesian roots, influences both her personal style and her approach to food — bridging cultures, memories, and traditions at the table. In this conversation, we explore identity, migration, and how food becomes a powerful way to tell stories across continents and generations. #HeelHollandBakt, #FrancisKuijk, #DutchFoodScene, #IndoRoots Support the show  #indonesianfood, #indonesianrestaurant, #indonesianstreetfood, #indodutch, #usaindonesianfood #indobros #indobrothers #dutch #culture #history #indisch Website: keasberry.com IG https://www.instagram.com/jeffkeasberry/ FB https://www.facebook.com/cookingwithkeasberry
