ArdBia, Galway | Our Members, Their Stories | 005

For the fifth episode of Our Members, Their Stories, we travel to Galway to meet the team at Ard Bia at Nimmos.Ard Bia opened in 2002 when Aoibheann MacNamara, originally from Donegal, couldn't find a job and decided to create one. What began on Quay Street found its home in Nimmos, an old stone customs house beside the Spanish Arch, looking out over the Claddagh Basin.Over two decades, it has become one of Galway's best loved restaurants, with seasonal local produce on the plate, art on the walls and a room shaped by the work of local craftspeople. But what keeps Ard Bia going is its people. In this episode, the team talk about friendships that go beyond work, a crew of very different personalities, owners who treat staff like family, and a culture built on care, respect and collective effort, where nobody carries a tough shift alone. Our Members, Their Stories is a series by the Restaurants Association of Ireland. Chef Sham Hanifa | Our Members, Their Stories | 004

For the fourth episode of Our Members, Their Stories, we travel to County Leitrim to meet Sham Hanifa.Born in Malaysia, Sham started cooking at twelve and worked his way up through every stage of the kitchen. At twenty, he came to Ireland for what he thought would be a short adventure. He met his wife here, started a family, and settled in Jamestown in 2008 to open The Cottage Restaurant. He built a kitchen there where Irish ingredients meet the Malay, Chinese, Thai and Indian flavours he grew up with, guided by a Malaysian idea called agak-agak, which roughly means cooking by instinct rather than by measurement. That thinking has carried him from The Cottage to My Kitchen in Carrick-on-Shannon, on to Buffalo Boy Steakhouse, a range of sauces, and his own Blasta Books cookbook. Our Members, Their Stories is a series by the Restaurants Association of Ireland. Bunratty Manor | Our Members, Their Stories | 003

For the third episode of Our Members, Their Stories, we visit the charming village of Bunratty in County Clare. There, we meet Noel Wallace and David Wallace at The Bunratty Manor, the family-run restaurant that Noel turned into one of Clare’s favourites.David recalls being a young boy and telling lost guests that his son would come pick them up on his bike. Noel shares how he spent years fighting cancer, but he’s still going strong and always greets every guest at the door. For Noel, saying goodbye is just as important as the welcome.People often say a good restaurant is where the locals choose to eat. Noel’s place proves this better than most, as it has been part of the Clare community for generations of families. Our Members, Their Stories is a series by the Restaurants Association of Ireland.
