Cardenas, a California pediatrician, recently forced into retirement after refusing to administer COVID vaccines to her patients as young as six months old.  For over 45 years, Dr. Cardenas operated a thriving pediatric practice in Anaheim, California, primarily serving low-income families. She had always adhered to recommended health protocols, including routine vaccinations for children. However, when COVID emerged, the children in her community rarely contracted the virus. Dr. Cardenas noted that the likelihood of dying from COVID as a child is approximately 1 in 2 million. This statistic contributed to her decision to withhold the COVID vaccine from her patients, as she was aware of adverse reactions reported by others. She communicated her concerns to various governing agencies, including Vaccines For All (VFC), CalOptima, and the Children's Hospital of Orange County, which oversee vaccination protocols. Initially, they permitted her to continue practicing. However, the situation changed when her office manager attempted to order more childhood vaccines. The VFC denied the order due to Dr. Cardenas's refusal to administer the COVID vaccine. As a result, the government agencies reallocated her patients to other doctors. Consumers 4 Wellness is an organization set up to help consumers reach out to their legislatures regarding what they would like included in their healthcare plans. The goal is to create a better healthcare plan for holistic, integrative modalities that help the whole person. Each person has about $11,000 in healthcare dollars each year, yet many plans do not include chiropractic, massage, reiki healing, nutrition, sexual health, or other alternative options. By joining Consumers 4 Wellness, it will create a base of information and knowledge on what types of wellness programs consumers want in their healthcare plans. Then Consumers 4 Wellness will be a platform that can push for changes in our healthcare system.     Brendan Wong is a bread baker and budding entrepreneur of the Origin Baking Co. in Orange County, CA. Formerly a food scientist, Brendan spent his first few years after college developing packaged food products for large and small companies. In 2017, Brendan attended a professional bread course at the San Francisco Baking Institute, after which he became hooked and has devoted himself to the craft ever since. Now, he uses all his knowledge and experience in the food industry to bring some of that San Francisco flavor back to his hometown of Orange, California to share with his local community.  Brendan shares about his background in food science, being able to bring that forth into his new love of baking. He explains about learning to bake bread and other baked goods in detail. He has honed his skills and currently does pop-up shops to sell his products. He goes into the building of a bakery business, from the kitchen space needed, the plans to scale up, and who his customers will be from wholesale to retail. One will be surprised at what truly goes into baking bread and croissants and the effort to bring a business to full-scale capacity.
